Description
This Pesto Tortellini Salad is packed with fresh, delicious flavors and made with just 4 ingredients! Toss together juicy cherry tomatoes, cheese tortellini, fresh mozzarella, and pesto for a quick, tasty side or easy lunch.
Ingredients
- 1 (20 oz) package refrigerated cheese tortellini
- 1 cup basil pesto
- 1 pint cherry tomatoes, halved
- 1 (8 oz) mozzarella cheese balls
- Fresh basil, to garnish
Instructions
- Bring a large pot of salted water to a boil. Add tortellini and cook according to package instructions until tender. Drain and let cool slightly.
- In a large bowl, add the cooked tortellini, mozzarella balls, cherry tomatoes, and pesto sauce. Toss it until evenly coated.
- Serve immediately at room temperature, or chill in the refrigerator for 30 minutes. Garnish the salad with fresh basil before serving.
Notes
Store your leftover pasta salad in an airtight container in the refrigerator for up to 3 days. Just be sure to give it a good stir before serving, as some of the dressing may have settled at the bottom.
