Description
These Hot Honey Chicken Sandwiches are the ultimate combo of crispy chicken, creamy slaw, pickles, and sweet-spicy hot honey. Made in the air fryer, they’re a quick and easy win for any day!
Ingredients
For the Chicken:
- 1 ½ lbs chicken breasts (3 large or 4 small breasts)
- 1 cup all-purpose flour
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ¼ teaspoon pepper
- 2 large eggs
- 3 cups cornflakes, crushed into coarse crumbs
- Cooking oil spray
Hot Honey Sauce:
- ½ cup honey
- 2 tbsp hot sauce (adjust to taste)
- 2 tbsp butter
- ¼ teaspoon red pepper flakes
To Assemble The Sandwich:
- 4 brioche buns
- 4–8 butter lettuce leaves
- 1 beefsteak tomato, sliced
- ½ cup coleslaw (homemade or store-bought)
- ½ cup pickle chips
Instructions
- Slice the chicken breasts in half lengthwise to create two thinner cutlets.
- Set Up Dredging Stations:
- In one shallow bowl, mix the flour with onion powder, paprika, salt, and pepper.
- In a second bowl, beat the eggs.
- In a third bowl, add the crushed cornflakes.
- Bread the Chicken. Working one piece at a time, dredge the chicken in the seasoned flour, shaking off excess. Dip in the egg, then press into the crushed cornflakes, coating thoroughly. Transfer the breaded chicken to a plate.
- Preheat the air fryer to 400°F for 5 minutes. Lightly grease the air fryer basket with oil spray and arrange chicken in a single layer. You may need to cook the chicken in two batches.
- Air fry the chicken for 10 minutes at 400°F, flipping halfway through, until crispy and browned around the edges.
- While the chicken is cooking, make the hot honey sauce. In a small saucepan over low heat, combine honey, hot sauce, butter, and red pepper flakes. Stir until butter melts and mixture is smooth. Taste and adjust the hot sauce to your desired level of heat.
- Drizzle or brush the hot honey over the chicken.
- Assemble the sandwich:
- Toast a brioche bun in a skillet or toaster until golden brown. (optional step)
- Place 1-2 pieces of lettuce on the bottom bun, followed by a tomato slice.
- Place 1-2 pieces of hot honey chicken on top of the tomato.
- Spoon 2 tablespoons of coleslaw on top of the chicken and spread in an even layer.
- Arrange 3-4 pickle slices on top of the coleslaw.
- Drizzle some extra hot honey over the pickles, then place on the top bun.
- Repeat these steps for the remaining 3 sandwiches.
Notes
- To keep your chicken sandwich fresh, store the chicken and other ingredients separately in the fridge. This prevents the bread from becoming soggy. The chicken will last for up to 3 days in an airtight container in the fridge.
- To reheat your chicken, you can place it in the air fryer at 350°F for about 5 minutes, or until heated through.
