Description

These Air Fryer Stuffed Peppers are crispy, cheesy, and packed with ground beef and rice. Made with pantry staples, they’re perfect for meal prep or a quick dinner!

Ingredients

  • 6 large bell peppers (any color), tops cut off and seeds removed
  • 1 lb ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice (white or brown)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded mozzarella
  • ⅓ cup cheddar cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Olive oil spray

Instructions

  1. Cut the tops off the peppers and remove seeds/membranes. Lightly spray the outsides with olive oil.
  2. In a skillet over medium heat, cook ground beef and onion until browned. Drain excess grease. Add garlic, diced tomatoes, cooked rice, Italian seasoning, salt, and pepper. Stir in half of the cheese.
  3. Spoon the beef mixture evenly into each pepper, filling to the top.
  4. Place stuffed peppers upright in the air fryer basket. Air fry at 360°F for 15 minutes, until peppers are tender.
  5. Sprinkle the remaining cheese on top of each pepper. Air fry another 2–3 minutes, until cheese is melted and bubbly.
  6. Remove carefully and let cool slightly before serving.
