Description
Air fryer Greek chicken thighs marinated in fresh lemon, garlic, and oregano, then air fried until the skin is crisp and the meat is juicy. Simple ingredients, about 25 minutes of cook time, and big Greek flavor. Opa!
Ingredients
- 4 chicken thighs, bone-in skin-on
- Juice of 1 lemon
- Zest of 1 lemon
- 1½ tablespoons dried oregano
- 1½ tablespoons minced garlic (3 to 4 cloves)
- 1 teaspoon seasoned salt
- 1 teaspoon black pepper, fresh coarse ground
- 1 tablespoon white wine vinegar
- 1½ tablespoons olive oil
- Salt to taste
- Lemon slices (optional)
Instructions
- In a bowl, whisk together the olive oil, white wine vinegar, lemon juice, lemon zest, oregano, seasoned salt, pepper, and garlic until well combined.
- Add the chicken and marinate in fridge for at least 30 minutes (2 – 4 hours is best).
- Preheat air fryer at 375°F for 5 minutes.
- Set air fryer to air fry, place chicken thighs skin side down into air fryer, air fry at 375°F for 24-28 minutes, flip chicken halfway through cooking. Add lemon slices if desired at halfway point too.
- When the time is up, check that the internal temperature is at least 185°F. Serve with lemon slices and your favorite side dish.
Notes
Marinate for at least 30 minutes, but 2 to 4 hours gives the best flavor. Because of the lemon juice and vinegar, I don’t recommend marinating longer than about 8 hours.
Cooking & doneness: Air fry (use air fry setting) at 375°F for 24 to 28 minutes, flipping halfway, until the thickest part reaches 185-195°F.
Swaps & storage: Boneless thighs cook faster (check around 12 to 14 minutes); red wine vinegar can stand in for white. Store leftovers up to 4 days, or freeze up to 3 months.
