Description
Corn on the cob is cooked to perfection in your air fryer and slathered in a creamy mix of mayonnaise, lime, and sour cream. It’s then topped with crumbled cotija cheese, chili powder, and chopped cilantro, creating a savory, tangy, and slightly spicy delight.
Ingredients
- 4 ears of corn, husked
- 1 tablespoon olive oil
- ¼ teaspoon salt
- â…› teaspoon pepper
- â…“ cup mayonnaise
- â…“ cup sour cream
- Juice & zest of 1 lime
- 1 teaspoon chili powder
- ¼ teaspoon of cayenne pepper (optional)
- ¼ cup cojita cheese (feta works here too!)
- ¼ cup cilantro, chopped
Instructions
- Brush the corn with olive oil and sprinkle it with salt and pepper
- Preheat your air fryer to 370℉ for 4-5 minutes
- Place the corn in your air fryer basket. Air fry for 12 minutes.
- While the corn is cooking, make the topping. In a small bowl, mix together the mayo, sour cream, lime juice, and lime zest.
- Once the corn comes out of the air fryer, generously spread the mayo mixture on top.
- Sprinkle on the chili powder (and cayenne if using), cojita cheese, and cilantro.
