Description

These delectable brownies feature a layer of chocolate fudge and a layer of silky smooth cheesecake swirled with more chocolate. These heavenly treats are going to wow everyone!


Ingredients

Cheesecake Layer

  • 4oz. Cream cheese, softened at room temperature
  • 1/4 cup granulated sugar
  • 1 egg, room temperature

For the brownies

  • 1 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup (1 stick) unsalted butter
  • 2/3 cup semisweet chocolate chips
  • 2 eggs, room temperature
  • 1 tsp vanilla extract
  • 2 tablespoons water

Instructions

  1. Preheat oven to 350°F. Line an 8×8 baking dish with parchment paper. Set aside.
  2. First we make the cheesecake layer: Add the cream cheese and 1/4 cup of sugar to a mixing bowl. Mix until smooth. Add in 1 egg and continue to mix until all ingredients are combined and batter is smooth. A stand mixer on medium for about 4 minutes will do the job perfectly.
  3. In a separate bowl, mix the dry ingredients (for the brownie layer): sugar, cocoa powder, flour, salt. Whisk until combined.
  4. In a microwave safe bowl, add chocolate chips and butter. Microwave in 30 second increments until butter and chocolate and butter are completely melted. It usually takes 1-2 minutes. Stir well to combine.
  5. Let the chocolate mixture sit for 5 minutes to cool before adding eggs and vanilla. Whisk to combine.
  6. Now add the chocolate mixture to the bowl of dry ingredients. Using a spatula, fold until all the ingredients are incorporated into a thick batter. Add 1 tablespoon of water to the batter and mix again to thin it out.
  7. Scoop out 1/4 cup of the brownie batter into a separate bowl and add 1 tablespoon of water to it and mix to combine. Set aside.
  8. Take the large bowl of batter and spread it out into the parchment-lined baking dish. Use a spatula to spread it out evenly.
  9. Pour the cheesecake layer right on top of the brownie layer and gently spread it over the top, being careful not to push or mix it into the brownie layer.
  10. Use a spoon, and add dollops of the reserved, thinned-out brownie batter directly into the cheesecake layer. It will be about 6 dollops. Drag a toothpick or the tip of a knife over the top of the brownies to create a swirl pattern.
  11. Bake at 350°F for 30-35 minutes, or until a toothpick inserted in the middle comes out with just a few crumbs.
  12. Let cool for 1 hour, then refrigerate for 1 hour before slicing and enjoying.
