Best Damn Pork Tacos

Ingredients

  • 1.5 lbs. pork tenderloin, trimmed and cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 ½ teaspoons brown sugar
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste
  • Juice and zest of 1 lime
  • 8 small corn or flour tortillas

Instructions

  1. Season the pork with salt, pepper, cumin, smoked paprika, chili powder, and brown sugar. Toss to coat.
  2. Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned pork pieces in a single layer. Cook for about 3 minutes per side, until browned and cooked through. Remove the pork from the skillet and set aside.
  3. In the same skillet, add the chopped onion.  Sauté until translucent, about 3-5 minutes.  Add the garlic and continue to sauté for an additional 1 minute.
  4. Return the cooked pork to the skillet.  Add the lime juice and zest. Stir everything together and cook for an additional 2-3 minutes, then remove from heat.
  5. Warm the tortillas in a separate skillet. Fill each tortilla with a generous portion of the pork mixture and add toppings of your choice.
