Ingredients
- 1.5 lbs. pork tenderloin, trimmed and cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 ½ teaspoons brown sugar
- 1/2 teaspoon chili powder
- Salt and pepper, to taste
- Juice and zest of 1 lime
- 8 small corn or flour tortillas
Instructions
- Season the pork with salt, pepper, cumin, smoked paprika, chili powder, and brown sugar. Toss to coat.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned pork pieces in a single layer. Cook for about 3 minutes per side, until browned and cooked through. Remove the pork from the skillet and set aside.
- In the same skillet, add the chopped onion. Sauté until translucent, about 3-5 minutes. Add the garlic and continue to sauté for an additional 1 minute.
- Return the cooked pork to the skillet. Add the lime juice and zest. Stir everything together and cook for an additional 2-3 minutes, then remove from heat.
- Warm the tortillas in a separate skillet. Fill each tortilla with a generous portion of the pork mixture and add toppings of your choice.
