Description

Tender chunks of chicken with fresh broccoli all covered in a homemade teriyaki sauce. This easy sheet pan dinner is perfect for a delicious meal any night of the week.

Ingredients

  • 1.5 pounds chicken breast, cut into bite-sized pieces
  • ½ cup soy sauce
  • ¼ cup water
  • 2 tbs honey
  • 1 tbs vegetable oil
  • 1 tbs sesame oil
  • 2 tbs rice vinegar
  • 2 cloves garlic, minced
  • 2 tsp cornstarch
  • 4 cups broccoli florets (about 1lb)
  • Rice, for serving
  • Optional: sesame seeds and scallions, for garnish

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper or foil for easier cleanup.
  2. Add the soy sauce, water, honey, vegetable oil, sesame oil, vinegar, garlic, and cornstarch to a small saucepan over medium heat.  Stir over heat for 5 minutes, until the cornstarch is all dissolved and the mixture is thickened.  Remove from heat and set aside.
  3. Add the chicken and broccoli to a large bowl.  Pour half of the teriyaki sauce on top and toss to coat.
  4. Transfer the seasoned chicken and broccoli to the prepared baking sheet and bake for 20 minutes. Internal temperature of chicken should be 165° when checked with an instant-read thermometer.
  5. Once you take the chicken and broccoli out of the oven, transfer it to a serving dish and pour the remaining teriyaki sauce on top.  Serve with rice and garnish with sesame seeds and scallions.
