Description

These Best Damn Stuffed Meatballs feature juicy meatballs filled with deliciously gooey mozzarella cheese. It’s an easy one-pot dinner recipe that makes enjoying comfort food effortless. Serve them on their own as an appetizer or with your favorite pasta for a delightful main course.


Ingredients

  • 1 lb ground beef
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced (or ½ teaspoon garlic powder)
  • 1 ½ tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp crushed red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley
  • 4 oz mozzarella cheese, cut into ½-inch cubes
  • 1 tbsp olive oil
  • 2 cups marinara sauce

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, parmesan, egg, garlic, Italian seasoning, salt, pepper, red pepper flakes (if using), and parsley. Mix until just combined.
  2. Shape and Stuff the Meatballs. Take about 2 tablespoons of the meat mixture and flatten it slightly in your palm. Place a cube of mozzarella in the center and wrap the meat around it, sealing it tightly. Roll into a smooth ball and repeat with the remaining meat and cheese.
  3. Cook the Meatballs. Heat olive oil in a large skillet over medium heat. Add the meatballs in a single layer. Sear for about 2-3 minutes per side until browned.
  4. Pour the marinara sauce into the skillet with the meatballs. Cover and let simmer for 20-25 minutes or until the meatballs are fully cooked (internal temperature should reach 160°F).
  5. Serve hot with spaghetti, on toasted sub rolls, or as an appetizer with extra marinara for dipping!
