Description
This BLT Pasta Salad is a summer BBQ must! Loaded with crispy bacon, juicy tomatoes, fresh lettuce, and tossed with pasta and a creamy dressing, it’s a fun twist on the classic sandwich.
Ingredients
Salad:
- 8 oz short-type pasta (rotini, bowtie, and penne are great options!
- 1 cup cherry tomatoes, halved
- 6 slices bacon, cooked and crumbled
- 2 cups chopped romaine, butter, or iceberg lettuce
- 1/3 cup diced red onion
- 1/2 cup cubed cheddar cheese (optional)
Dressing:
- 1/4 cup mayonnaise
- 1/2 cup Greek yogurt
- 1 tbsp white vinegar or lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- 1/2 teaspoon Italian seasoning, dried dill, or dried parsley
- Salt and black pepper, to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.
- Make the dressing: In a small bowl, whisk together the mayo, Greek yogurt, vinegar, mustard, garlic powder, dried herbs, salt, and pepper. Taste and adjust seasoning as needed.
- Assemble the salad: In a large bowl, combine the cooked pasta, cherry tomatoes, crumbled bacon, chopped lettuce, red onion, and cheddar cheese (if using).
- Add dressing: Pour the dressing over the salad and toss gently to coat everything evenly. You may not need to use all of the dressing. Start with half and add more as desired.
- Serve or chill: Serve immediately for a crisp lettuce texture. If making ahead, keep the lettuce and dressing separate and mix just before serving to maintain freshness.
