Easiest Ever Fried Rice

Description

This Fried Rice recipe couldn’t be easier – just throw everything into a pan and cook! Think light, fluffy rice loaded with savory, umami goodness.


Ingredients

  • 2 cups dry rice, cooked and cooled
  • 2 tablespoons olive oil
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 1/2 tablespoons fresh ginger, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/3 cup green onion, thinly sliced
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar (or rice wine vinegar)

Instructions

  1. Rinse the dry rice under cold water until the water runs clear to remove excess starch.
  2. Cook the rice using your preferred method (rice cooker or stovetop), then let it cool. For best results, refrigerate the rice until chilled.
  3. Heat a large skillet or wok over medium-high heat. Add the olive oil and sesame oil.
  4. Once the oil is hot, add the minced garlic and ginger. Cook for 1 minute, stirring constantly, until fragrant.
  5. Push the garlic and ginger to one side of the skillet and pour the beaten eggs into the open space. Let them cook for about 1 minute, then scramble and stir to combine with the aromatics.
  6. Add the cooked rice to the skillet. Stir well to break up any clumps and coat the rice with the oil and aromatics. Cook for about 2 minutes.
  7. Season with salt and pepper. Stir and cook for another 2 minutes.
  8. Add the soy sauce and rice vinegar. Mix thoroughly and cook for 2 more minutes.
  9. Stir in the sliced green onions and cook for 2 final minutes, until everything is heated through and well combined.
