Description
This Sweet and Sour Pork is a quick, flavorful alternative to takeout, featuring tender pork and a tasty sweet and tangy sauce. Serve it with steamed rice or noodles for a complete meal!
Ingredients
For the pork:
- 1 lb pork tenderloin or boneless pork chops, cut into bite-sized cubes
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 1 egg white
- 1 tbsp neutral oil (like vegetable or avocado oil)
For the sauce:
- 1/3 cup rice vinegar
- 2 tbsp ketchup
- 3 tbsp soy sauce
- 3 tbsp brown sugar
For the stir-fry:
- 1 red bell pepper, chopped into 1-inch pieces
- 1 green bell pepper, chopped into 1-inch pieces
- 1 small onion, chopped
- 1 cup canned pineapple chunks
- 2 tsp cornstarch
Instructions
- Make the sauce. In a small bowl, whisk together vinegar, ketchup, soy sauce, and brown sugar. Set aside.
- In a bowl, mix the soy sauce, cornstarch, and egg white. Add the pork and toss to coat. Let the pork sit and marinate at room temperature for 10-15 minutes before moving on to the next step.
- Heat oil in a large skillet over medium-high heat. Add pork and sauté until browned and cooked through, about 5–7 minutes. Remove the pork from the pan and set aside.
- Note: If you see leftover marinade bits curdled in the pan, quickly wipe the pan clean before continuing to the next step. This keeps the sauce smooth.
- Cook the vegetables. In the same pan that you used for the pork, add bell peppers and onion. Sauté for 3–4 minutes until the peppers are slightly softened and the onion starts to become translucent. Add pineapple and cook for another minute.
- Return the pork to the pan. Pour in the sauce and bring to a simmer.
- Mix the cornstarch with 1 tablespoon of water to make a cornstarch slurry. Stir the slurry into the stir-fry and continue to cook for 2-3 minutes, until the sauce is thickened. Remove from heat.
- Garnish with sesame seeds and/or green onions if desired. Serve and enjoy!
Notes
Store your sweet and sour pork in an airtight container in the fridge for up to 3-5 days. When ready to eat, reheat in the microwave or on the stovetop until heated through.
