If you love eggnog, you’ll go crazy for this warm, fluffy Eggnog Bread, which combines classic holiday spices and creamy eggnog into a sweet loaf that’s guaranteed to be a new festive favorite.
Ingredients
- 1 cup (2 sticks) unsalted butter, room temperature
- 1 3/4 cup all-purpose flour
- 1 cup granulated sugar
- 3 eggs + 2 egg yolks, room temperature
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1/2 cup eggnog, room temperature
- 2 tablespoons rum
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
For the glaze (optional):
- 1 cup powdered sugar
- 3–4 tablespoons eggnog
- ½ teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F. Grease a loaf pan (9×5-inch and 8×4-inch both work) and line with a sling of parchment paper.
- In a medium bowl, whisk together flour, baking powder, salt, nutmeg, and cinnamon. Set aside.
- In a large bowl, use an electric mixer to beat the butter and granulated sugar together until light and fluffy, 2–3 minutes.
- Add the eggs, egg yolks, and vanilla. Mix until all ingredients are combined.
- Note: the mixture may look a bit separated/curdled at this point. Don’t worry, the batter will smooth out after the next step!
- Add half of the dry ingredients to the wet ingredients. Fold until just combined. Pour in the eggnog and stir until the batter looks smooth. Add the remaining dry ingredients and gently fold again, stopping as soon as the mixture comes together.
- Pour the batter into the prepared loaf pan. Bake time will vary depending on the size of your pan:
- If you are using a 9×5-inch loaf pan, bake for 50-55 minutes
- If you are using an 8×4-inch loaf pan, bake for 1 hour and 10 minutes – 1 hour and 15 minutes. At the end of the cook time, a toothpick inserted in the center of the loaf should come out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Optional glaze: Whisk together powdered sugar, eggnog, and vanilla until smooth. Drizzle over cooled bread and let it set before slicing.
Notes
Have any leftover eggnog bread? Store it in an airtight container at room temperature for 2-3 days. You can also store it in the refrigerator for up to a week, or freeze it for longer storage. If freezing, wrap the bread tightly in plastic wrap, then place it in a freezer bag.
