Grilled Chicken and Peach Salad

Description

This grilled chicken and peach salad is the perfect combination of smoky, savory flavors and juicy, sweet peaches. Perfect for summer cookouts or an easy dinner.


Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste

For the Salad:

  • 2 ripe peaches, halved and pitted
  • 6 cups mixed salad greens of choice (I use spring mix)
  • 1/4 cup thinly sliced red onion
  • 1/4 cup crumbled goat cheese or feta
  • 1/4 cup chopped pecans (walnuts work here too)
  • Olive oil, for brushing the peaches

For the Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 2 teaspoons honey or maple syrup
  • Salt and black pepper, to taste

Instructions

  1. Cut a chicken breast in half lengthwise to create two thinner cutlets.  Repeat with the second breast.
  2. In a small bowl or ziploc bag, combine the olive oil, Dijon mustard, minced garlic, Italian seasoning, salt, and pepper. Add the chicken breasts and coat well. Marinate in the fridge for at least 30 minutes, up to 4 hours.
  3. Heat your grill or grill pan to medium-high heat. Lightly oil the grates if needed.
  4. Remove chicken from marinade and grill for 4–6 minutes per side, or until cooked through. Let rest for 4-5 minutes before slicing into strips.
  5. Grill the Peaches.  Brush the cut sides of the peaches with a bit of olive oil. Place cut side down on the grill and cook for 2–3 minutes, or until char marks appear and peaches are slightly softened. Slice into wedges.
  6. Make the Dressing.  Whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and pepper in a small bowl or jar.
  7. Assemble the Salad.  In a large bowl or platter, arrange the mixed greens. Top with sliced grilled chicken, grilled peach wedges, red onion, goat cheese, and pecans.
  8. Drizzle with the dressing just before serving.
