Description
This Instant Pot Cajun Chicken and Rice is a flavorful, one-pot meal packed with tender chicken, fluffy rice, and bold Cajun spices!
Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 1/2 tablespoons Cajun seasoning (store-bought or homemade)
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1 small onion, diced
- 1 cup diced red bell pepper
- 1 cup diced green bell pepper
- 2 cloves garlic, minced
- 1 cup long-grain white rice
- 1 1/2 cups low-sodium chicken broth
- Fresh parsley, chopped, for garnish (optional)
Instructions
- In a large bowl, toss the chicken pieces with the Cajun seasoning, salt, and pepper until well coated.
- Turn your Instant Pot to the Sauté mode. Add olive oil. Add the seasoned chicken. Cook for 2–3 minutes until lightly browned (it doesn’t need to cook through fully). Remove the chicken and set aside.
- Add the diced onion to the pot. Sauté for 2–3 minutes until it softens slightly. Add the bell peppers and sauté for another 3 minutes. Stir in the minced garlic and cook for another 30 seconds, until fragrant.
- Pour in the rice and chicken broth. Stir to combine and scrape up any browned bits from the bottom of the pot.
- Add the chicken back into the pot and gently spread it evenly over the rice. Do not stir.
- Seal the Instant Pot lid and valve. Cook on high pressure for 7 minutes.
- Let the pressure naturally release for 5 minutes, then quick release the rest of the way.
- Open the lid. Fluff the rice gently with a fork. Let sit for a couple of minutes to absorb any remaining liquid.
- Garnish with chopped fresh parsley if using. Serve and enjoy!
