Description

This Loaded Potato Soup has all the classic loaded toppings like bacon, sour cream, and cheddar mixed right in. It’s the perfect meal for a cold night, with every bite being super cheesy and flavorful.


Ingredients

  • 6 strips bacon, chopped
  • 2 Tbsp butter
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 3 Tbsp flour
  • 2 ½ lbs gold potatoes, peeled and diced (about 6 medium)
  • 4 cups chicken broth
  • 2 cups milk
  • ½ cup heavy cream (or extra milk)
  • 1 tsp salt (adjust to taste)
  • 1 tsp black pepper
  • ½ tsp smoked paprika (or ancho chili powder)
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • Toppings: more cheddar, sour cream, chives, extra bacon

Instructions

  1. Cook the bacon in a large pot until crispy. Remove and set aside, leaving a couple tablespoons of drippings in the pot.
  2. Add butter and onion to the pot and cook until softened. Then stir in garlic.
  3. Sprinkle flour over the onion mixture, stir until combined.
  4. Add potatoes, broth, milk, cream, and seasonings (salt, pepper, smoked paprika). Stir well.
  5. Simmer until potatoes are tender, about 15 minutes.
  6. Blend about half the soup with an immersion blender right in the pot, leaving some chunks.
  7. Stir in sour cream, cheddar cheese, and half the bacon until melted and creamy.
  8. Serve hot, topped with the rest of the bacon, more cheese, sour cream, and chives.
