Instructions
- In a medium bowl, crack the eggs. Add heavy cream, salt, and pepper. Whisk until fully combined and slightly frothy using a fork.
- Heat a nonstick skillet over medium-low heat. Add the butter and let it melt gently, coating the pan.
- Pour in the egg mixture. Let it sit for a few seconds, then gently stir with a spatula, pushing from the edges to the center. Continue slowly stirring every few seconds to form soft curds.
- Cook until the eggs are just set but still slightly glossy and soft.
- Plate and serve warm.Top with fresh herbs like chopped chives.
