Description
These crispy air fryer zucchini fries are coated in golden breadcrumbs and Parmesan, delivering a crunchy, low-carb snack in just 30 minutes!
Ingredients
- 2–3 medium zucchinis
- ½ cup all-purpose flour
- 2 eggs, at room temperature
- 2 tablespoons water
- ½ cup plain breadcrumbs
- ½ cup panko breadcrumbs
- ¼ cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- Olive oil spray, for air frying
- Chopped parsley, to garnish
Instructions
- Wash and trim the ends off the zucchinis. Cut them in half lengthwise, then slice into fries about ½-inch thick and 3–4 inches long.
- Set up the dredging station. First, bowl with flour. In the second bowl, I beat the egg along with the water. In the third bowl, mix breadcrumbs, panko, parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
- Dredge each zucchini stick in flour, then dip into the egg, and finally coat in the breadcrumb mixture. Press gently to help the coating stick.
- Lightly spray the air fryer basket with olive oil spray. Arrange the zucchini fries in a single layer, making sure they don’t overlap. Cook in batches.
- Air fry at 400°F for 10–12 minutes, flipping halfway through and spraying lightly with oil for extra crispiness. Fries should be golden brown and crisp on the outside, tender inside.
- Serve immediately by garnishing with parsley, along with marinara for dipping.
