Ingredients You Need
- Zucchinis: Fresh zucchini is best for this recipe. Make sure to wash and dry them before slicing.
- All-purpose flour: Flour helps to create a crispy coating on the fries.
- Eggs: Make sure the eggs are at room temperature before using them.
- Water: This gets mixed in with the egg to create an egg wash.
- Breadcrumbs: I used a mix of plain breadcrumbs and panko breadcrumbs for extra crunch.
- Grated parmesan cheese: This adds a delicious savory flavor to the fries.
- Seasoning mix: Italian seasoning, garlic powder, salt, and black pepper are all combined to make the perfect seasoning for these fries.
- Olive oil spray: For air frying the fries.
- Fresh parsley: To garnish on top of the fries before serving.

Dip Ideas for Dunking
The right dipping sauce can completely transform the flavor profile of these air fryer zucchini fries. Here are a few ideas to try out:
- Marinara sauce: This classic red sauce pairs perfectly with the Italian seasoning in the fries.
- Ranch dressing: The cool and creamy ranch dressing balances out the crunchiness of the fries.
- Garlic aioli: This tangy and garlicky sauce adds a delicious kick to the fries.
- Honey mustard: The sweet and spicy combination of honey and mustard complements the savory flavor of the fries.
- Sriracha mayo: If you’re a fan of spice, try adding some sriracha to your mayo for a fiery dipping sauce.

Preparation
To start, wash and trim the ends off the zucchinis. Cut them in half lengthwise, then slice into fries about ½-inch thick and 3-4 inches long.

Now set up the dredging station. First, fill a shallow bowl with flour. In the second bowl, beat the egg along with the water. In the third bowl, mix breadcrumbs, panko, parmesan cheese, and seasoning.

Dredge the zucchini sticks in flour, then dip them into the egg mixture, and finally coat them in the breadcrumb mixture.
Pro Tip
I find that pressing gently helps the coating stick!
Cooking
Lightly spray the air fryer basket with olive oil spray. Arrange the zucchini fries in a single layer, making sure they don’t overlap. Cook in batches.
Air fry at 400°F for 10-12 minutes, flipping halfway through and spraying lightly with oil for extra crispiness. Fries should be golden brown and crisp on the outside, tender inside.

Serving
Now it’s time to dig in! Serve immediately by garnishing with parsley, along with marinara (or your preferred sauce) for dipping.
