Spicing up and seasoning your culinary creations isn’t just about choosing the right ingredients. It’s also about how you use them. One such staple, black pepper, holds more power than you might realize, especially when it’s freshly ground. What are Peppercorns?
Black peppercorns are small, dried fruits of the Piper nigrum plant, which are commonly found in South India and Vietnam. When picked fresh, peppercorns are quite small – about 5 millimeters in diameter, which is about the size of a small pea. At this stage, they are still green and have a vibrant, fresh appearance. They are then dried to produce the familiar black peppercorns used in cooking.

Why Fresh Ground Black Pepper Makes a Difference

Choosing a Pepper Mill/Grinder
Just to be clear, a “pepper mill” or a “pepper grinder” are the same thing. The terms are used interchangeably everywhere. The actual proper name is a pepper mill (two words).
You’ll find pepper mills that are large, small, wooden, clear, etc. I look for ones that are easy to adjust the grind settings and ones that hold enough pepper so that I’m not filling it as frequently.
Of course, there’s fancy ones in which all you do is press a button and it grinds the pepper (or salt for its partner) for you!

It’s a more hands-on approach and can be especially useful for achieving a coarse grind or for grinding small amounts.
Make sure to read any directions prior to your first pepper grind with a mortar and pestle. You don’t just start jabbing at the peppercorns with the pestle. If you do, you’ll have pepper flying all over the place.
Fine vs. Coarse Ground Pepper: When to Use Each
