Classic Buttermilk Pancakes

Description

These classic buttermilk pancakes are easy to make, fluffy and delicious. Using buttermilk in the batter gives them a classic taste and unbeatable texture, making them the perfect breakfast treat.


Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • 1 ½ cups buttermilk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter + a tablespoon to grease the pan
  • Mixed berries, to serve
  • Maple syrup, to serve

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the egg, buttermilk, melted butter, and vanilla extract until smooth.
  3. Gradually combine the dry ingredients into the wet ingredient mixture, stirring gently until just combined. (Do not overmix it)
  4. Let the batter rest for 5 minutes before cooking.
  5. Heat a non-stick skillet over medium heat and lightly grease with butter. Pour ¼ cup of batter per pancake and cook for 2-3 minutes, until bubbles form on the surface. Flip and cook for another 1-2 minutes, until golden brown.
  6. Stack the pancakes and serve warm with berries and maple syrup.
