Description
These classic buttermilk pancakes are easy to make, fluffy and delicious. Using buttermilk in the batter gives them a classic taste and unbeatable texture, making them the perfect breakfast treat.
Ingredients
- 1 ½ cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 large egg
- 1 ½ cups buttermilk
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter + a tablespoon to grease the pan
- Mixed berries, to serve
- Maple syrup, to serve
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the egg, buttermilk, melted butter, and vanilla extract until smooth.
- Gradually combine the dry ingredients into the wet ingredient mixture, stirring gently until just combined. (Do not overmix it)
- Let the batter rest for 5 minutes before cooking.
- Heat a non-stick skillet over medium heat and lightly grease with butter. Pour ¼ cup of batter per pancake and cook for 2-3 minutes, until bubbles form on the surface. Flip and cook for another 1-2 minutes, until golden brown.
- Stack the pancakes and serve warm with berries and maple syrup.
