Ingredients
For the Meatloaf:
- 1/2 cup yellow onion, small diced
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 1 egg
- 1 lb ground beef
- 1/2 cup milk
- 4 oz mascarpone cheese (about 1/2 cup)
- 1 tbsp Lee & Perrins Worcestershire sauce
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
- 1 tbsp olive oil (for sautéing)
For the Topping:
- 1/4 cup ketchup
- 1 tbsp Sweet Baby Ray’s BBQ sauce (or your favorite)
- 2 tbsp brown sugar
Instructions
- Preheat the oven to 350°F. Lightly grease a loaf pan or line it with parchment paper.
- In a large skillet over medium heat, warm the olive oil. Add the diced onion and cook for about 5 minutes, stirring occasionally, until soft and translucent. Stir in the minced garlic and cook for 1 more minute. Remove from heat and set aside.
- In a large mixing bowl, whisk together the milk and egg. Stir in the Worcestershire sauce, oregano, kosher salt, and black pepper until combined.
- Add the breadcrumbs and mascarpone cheese to the milk mixture. Stir until the mascarpone is fully incorporated.
- Add the sautéed onions and garlic to the bowl and mix gently.
- Add the ground beef to the bowl. Using clean hands, mix thoroughly until everything is well combined.
- Transfer the meat mixture to the prepared loaf pan and shape it into a loaf.
- In a small bowl, mix together the ketchup, BBQ sauce, and brown sugar. Spread this mixture evenly over the top of the meatloaf.
- Bake for 55-60 minutes, or until the internal temperature reaches 160°F.
- For an extra flavorful topping, broil the meatloaf for the last 2–3 minutes of baking until the glaze bubbles and slightly caramelizes. Watch carefully to avoid burning.
- Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.
