Description

Quick and easy breakfast air fryer frittata. Made with eggs, cheese and fresh veggies, it cooks to perfection in under 15 minutes.


Ingredients

  • 4 eggs
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 cup fresh spinach, chopped
  • 2 scallions, chopped
  • 2 tablespoons half and half
  • salt and pepper to taste

Instructions

  1. In a medium bowl, beat eggs with half and half.
  2. Stir in cheese, spinach, scallions, salt and pepper.
  3. Spray a 6″ cake pan with cooking spray (very important). Pour mixture into pan.
  4. Air fry at 350 degrees (F) for 10-14 minutes. A toothpick inserted will come out clean when done.
  5. Let cool for 5 minutes before removing from pan and serving.
