    Easy Air Fryer Breakfast Frittata

    Whip up a quick and easy breakfast recipe with this air fryer frittata. Made with eggs, cheese and fresh veggies, it cooks to perfection in under 15 minutes.

    What is a Breakfast Frittata?

    A frittata is most similar to a quiche or an omelette. The foundation is eggs and cheese. After that, the sky’s the limit with what you can add. For this recipe we’ll be making a spinach frittata using fresh chopped spinach. We’ll also add some chopped green onions.

    The Most Simple of Ingredients

    We start by beating 4 eggs with 2 tablespoons of half and half. To that we’ll add about ¼ cup of fresh chopped spinach a couple of chopped scallions, and ½ cup of shredded cheddar cheese. You can certainly substitute the cheese, but I find that sharp cheddar really brings out the flavor of the dish. Add salt and pepper to taste, but you don’t need to go too heave on either. About ¼ tsp of each is plenty.

    Air Fry for 10-14 minutes at 350 (F)

    Our frittata will cook in a 6″ round cake pan. Make sure to spray the inside of the pan with cooking spray. This step in important! You know how eggs are – they stick to everything! Pour the egg mixture into the cake pan and place it in your air fryer basket or on the tray (depending on air fryer style. Set to air fry at 350 degrees (F) for 10 minutes. Use a toothpick to poke into the frittata to see if it’s done through. If the toothpick comes out clean, it’s done. If not, continuing air frying for another 1-4 minutes. The frittata will puff up while cooking, and settle after being removed and cooling.

    Let Cool

    After removing the frittata from the air fryer, let is rest and cool in pan for at least 5 minutes. Use a spatula around the edges and it should start to come right out of the pan. Use a knife or pizza cutter to slice for serving.

    Using Other Ingredients

    There are so many possibilities when it comes to frittatas. Just like omelets, you can add any vegetables or meats to your liking. If using meat such as breakfast sausage or bacon, be sure to cook it separately first. You don’t want to add raw meat. If using ham, it’s already cooked so you can dice it up and add it right in. If using vegetables such as fresh broccoli or asparagus, it helps to soften them up a bit first. You can do this by placing them in a bowl with a little water and microwaving them for about 2 minutes. Then let cool for a bit before adding to the egg mixture.

    Storing and Reheating

    One of the awesome things about frittatas, is that you can save the leftovers. Store them in an airtight container for up to 3 days. Microwave for about 30-45 seconds to reheat. You can make them ahead of time for a quick breakfast with a burst of protein in the morning.

    Ingredients

    • 4 eggs
    • ½ cup shredded sharp cheddar cheese
    • ¼ cup fresh spinach, chopped
    • 2 scallions, chopped
    • 2 tablespoons half and half
    • salt and pepper to taste

    Instructions

    1. In a medium bowl, beat eggs with half and half.
    2. Stir in cheese, spinach, scallions, salt and pepper.
    3. Spray a 6″ cake pan with cooking spray (very important). Pour mixture into pan.
    4. Air fry at 350 degrees (F) for 10-14 minutes. A toothpick inserted will come out clean when done.
    5. Let cool for 5 minutes before removing from pan and serving.

      Just got an air fryer and this is the very first recipe I tried! Other than premade pizza rolls. It turned out great. I used the 7 in pizza pan that came with my air fryer. It took 12 minutes to cook. My husband LOVED it. He kept taking bites while it was supposed to be cooling. I don’t like eggs, so I didn’t try it, but it was just the right size for him to have a few servings.
