Grilled Burger Skewers

Description

 

These Grilled Burger Skewers are like mini cheeseburgers on a stick! In just 10 minutes, you’ll have juicy patties with melty cheese and a tasty homemade burger sauce, perfect for snacking.


Ingredients

For the Burgers:

  • 1 lb ground beef (80 or 85% lean)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon garlic powder

  • 4 slices thick-cut sandwich bread, cut into quarters

  • 4 slices cheddar or American cheese, cut into quarters (optional)

  • ½ cup cherry tomatoes or campari tomatoes, sliced

  • ½ cup pickle chips

  • 16 pieces of butter lettuce

  • 16 cocktail picks

For the Burger Sauce:

  • ½ cup mayonnaise

  • 2 tablespoons ketchup

  • 1 tablespoon yellow mustard

  • 2 teaspoons finely chopped pickles (or pickle relish)

  • 1 teaspoon white vinegar (or pickle juice)

  • ½ teaspoon garlic powder

  • Salt and pepper, to taste


Instructions

For the Burgers:

  1. Preheat the grill to medium-high heat (about 400°F).

  2. Shape the ground beef into small patties, about 3 inches in diameter.  You should yield 13-16 patties from 1 pound of beef.  Season the patties on both sides with salt, pepper, and garlic powder.

  3. Grill the patties:  Place patties on the hot grill and cook for 3-4 minutes per side, or until cooked through.

  4. Optional step: In the last minute of cooking, top with a piece of cheese to melt slightly.

  5. Optional step: Lightly toast the bread on the grill until golden, 30–60 seconds on each side.

  6. Assemble skewers.  Spread about a teaspoon of burger sauce on each piece of bread, then place the burger patties on top.  Layer the remaining ingredients in the following order: lettuce, tomato, pickle chip.

  7. Stick a cocktail pick through each mini burger to make a skewer.

For the Burger Sauce:

 

  1. In a small bowl, combine mayonnaise, ketchup, and mustard.

  2. Stir in chopped pickles or relish, vinegar, and seasonings.

  3. Taste and adjust with salt, pepper as needed.

Notes

Store your grilled burger skewers separately from the other burger fixings to prevent them from getting soggy. They’ll do best in an airtight container or bag in the refrigerator for up to 3 days.
