Another cool thing about these burger bites is that since they’re small, they cook super fast. On hot summer days, the less time spent by the grill, the better, right? Plus, you can still enjoy grilling without missing out on all the backyard BBQ mingling.

Ingredients
- Ground beef: I prefer 80 or 85% lean ground beef, but feel free to use your go-to.
- Seasoning: We’re seasoning our beef patties with a simple mix of salt, black pepper, and garlic powder.
- Thick-cut sandwich bread: This will be cut into quarters to make the mini burgers.
- Cheddar cheese (optional): Use this if you want mini cheeseburgers! American cheese or any other melty cheese will also work well.
- Cherry tomatoes: Keep the size small for these burger skewers. Campari tomatoes are a great alternative.
- Pickle chips: Gotta love pickles on burgers! Omit if you’re not a fan.
- Butter lettuce: An essential burger ingredient. Regular lettuce is fine too.
- Cocktail picks: To skewer your burgers.
For the Burger Sauce:
- Mayonnaise: The base for the burger sauce, providing a creamy texture.
- Ketchup: Adds a touch of sweetness and tangy flavor.
- Yellow mustard: Brings a slight tang and sharpness to balance the sweetness.
- Pickles: Adds crunch and a zesty, briny flavor. You can also use pickled relish.
- White vinegar: Enhances the tanginess and ties the flavors together. Pickle juice makes a great substitute.
- Seasoning: Garlic powder, salt, and pepper add depth and a savory kick.
How to Make Grilled Burger Skewers
Step 1: Make the Patties
Preheat the grill to medium-high heat (about 400°F).
Next, shape the ground beef into small patties, about 3 inches in diameter. You should yield 13-16 patties from 1 pound of beef.
Season the patties on both sides with salt, pepper, and garlic powder.
Step 2: Grill the Burgers
Place your beef patties on the hot grill rack and cook for 3-4 minutes per side, or until cooked through.
Love cheese on your burgers? Just toss a slice on during the last minute of cooking to get it nice and melty. And to take up another notch, place the bread on the grill for 30-60 seconds per side for that perfect golden toast.
Step 3: Make the Burger Sauce
In a small bowl, combine mayonnaise, ketchup, and mustard.
Stir in chopped pickles or relish, vinegar, and seasonings. Then taste and adjust with salt and pepper as needed.
Step 4: Assemble the Skewers
Spread about a teaspoon of burger sauce on each piece of bread, then place the burger patties on top. Layer the remaining ingredients in the following order: lettuce, tomato, pickle chips.

To reheat, place the skewers on a microwave-safe plate, cover with a damp paper towel, and heat for 1-2 minutes. You can also reheat them in the air fryer for 3-4 minutes at 375°F, or put them back on the grill for a couple of minutes until heated through.
