    Being the family cook comes with nightly dinner responsibilities, and sometimes ya get bored with the same ol’ same old. Lately, I’ve been swapping my usual Best Damn Smash Burgers with options like these Grilled Burger Skewers and, of course, cheeseburger sliders.

    These ground beef queso sliders are such a great change of pace. It’s a deliciously savory, cheesy, and slightly sweet bite, with tender beef and a hint of onion, all wrapped in a toasted Hawaiian roll. It’s one of those family-friendly meals that everyone loves!

    Ingredients

    • Butter: This is used for sautéing the beef and onions.
    • Ground beef: Provides that juicy and savory base. You can use ground meat or vegetarian options if you’d like.
    • Onion: Finely diced to add a hint of sharp, aromatic flavor.
    • Velveeta cheese: A simple cheese sauce that creates a simple, rich, and creamy cheese sauce.
    • Can diced tomatoes: Adds a tiny bit of freshness and acidity to cut through the richness of the cheese and beef.
    • Salt & pepper: Use kosher salt and freshly ground black pepper to season the beef mixture to taste.
    • Hawaiian rolls: A 12-pack of these sweet slider rolls provides the perfect soft, fluffy vessel for the queso beef.
    • Green onions: Sliced for a fresh, mild onion garnish.

    Make It Your Own

    Make your own style of slider by customizing this recipe however you’d like! Here are some ideas:

    • Jalapeño slices for a spicy kick.
    • Swap Velveeta for a creamy white queso or another cheese of your choice.
    • Use Beyond Beef or veggie burger patties for a plant-based option.
    • Add a fried egg on top for a breakfast slider.
    • Use different types of rolls, such as brioche or pretzel, for unique flavor profiles.

    How to Make Ground Beef Queso Sliders

    Step 1: Brown the Beef

    To start, preheat the oven to 350°F and lightly spray a 9×12-inch baking dish or sheet pan with nonstick cooking spray.

    In a large skillet, melt butter over medium heat. Then add the ground beef and cook until browned and fully cooked (165°F). Remove from the pan and set aside.

    Step 2: Cook Veggies & Add Cheese

    Now in the same pan, add the diced onion and cook for 5 minutes, until softened.

    Stir in Velveeta cheese, diced tomatoes, and remaining butter. Cook until cheese is completely melted and the mixture is smooth.

    Step 3: Assemble

    Return the cooked beef to the pan, add salt and pepper, and mix well.

    Now let’s stack ’em up! Slice the Hawaiian rolls in half horizontally, keeping the top and bottom halves connected.

    Place the bottom half of the rolls in the pan. Spread the beef mixture evenly over the rolls, then top with sliced green onions.

    Step 4: Bake & Serve

    Add the top half of the slider buns and bake for 10–15 minutes, or until the buns are toasted and golden brown.

    Slice and serve warm. Enjoy!

    What Goes Well with Beefy Queso Sliders

    When it comes to sides, I treat these sliders just like a regular burger. They’re amazing with my Air Fryer Homestyle French Fries or these simple Baked Sweet Potato Fries.

    Storage & Reheating

    Store your sliders in an airtight container in the fridge for up to 3 days. To reheat, I recommend reheating the Hawaiian buns and filling separately. 

    You can reheat the buns in the oven or toaster oven for a few minutes until warm and slightly crispy, while reheating the filling in a saucepan or microwave until heated through.

    Ingredients
