Fire up the grill for these Lemon Dijon Pork Chops! Juicy, flavorful, and marinated in a zesty lemon-mustard mix, they’re a guaranteed hit for any cookout.
Ingredients
- 4 thick-cut bone-in pork chops (1–2″ thick)
- 3 tablespoons olive oil
- Juice and zest of 1 lemon
- 2 teaspoons Dijon mustard
- 3 garlic cloves, minced
- 1 tablespoon fresh rosemary, chopped (or 1 tsp dried)
- 1 tablespoon fresh thyme, chopped (or 1 tsp dried)
- 1½ teaspoons kosher salt
- 1 teaspoon black pepper
- Optional: pinch of red pepper flakes
Instructions
- Whisk together olive oil, lemon juice and zest, Dijon mustard, garlic, rosemary, thyme, salt, pepper, and red pepper flakes.
- Pour mixture over pork chops in a shallow dish or zip-top bag.
- Marinate for at least 1 hour or up to overnight in the fridge.
- Preheat grill to medium-high heat (about 400°F) with lid closed for at least 10 minutes.
- Remove pork chops from marinade and pat off excess moisture.
- Grill pork chops for 6–7 minutes on the first side, then flip and grill 4–5 minutes more, or until internal temperature reaches 145°F.
- Let rest for 5 minutes before serving.
Notes
Store your grilled pork chops in an airtight container or tightly wrapped in foil in the refrigerator for up to 3 days. To reheat, place them in a preheated oven at 375°F for about 10 minutes or until heated through. You can also throw them on a hot grill for a few minutes on each side.
