    These lemon mustard pork chops are one of those elegant, entertaining recipes that make for a scrumptious meal. The combo of tangy lemon and savory Dijon mustard adds a depth of flavor that simply can’t be matched. Not only that, it’s incredibly easy to prepare – just remember to marinate it for at least an hour, and you’re all set!

    Ingredients

    • Thick-cut bone-in pork chops: Try to get pork chops that are about 1-2 inches thick. You can use boneless pork chops; just adjust the cooking time accordingly.
    • Olive oil: The base of our marinade. This will add richness and create a crispy outer crust.
    • Lemon: You’ll want some lemon juice and zest to give the marinade acidity and bright flavor.
    • Dijon mustard: The key to a flavorful marinade for this easy pork chop recipe.
    • Garlic: It’s always a good idea to add garlic to marinades!
    • Fresh herbs: Rosemary and thyme bring an earthy, herbaceous element. You can sub with dried herbs if you don’t have fresh.
    • Seasoning: We keep it simple with just salt, pepper, and a pinch of red pepper flakes if you want some heat.

    Preparation

    Whisk together the olive oil, lemon juice and zest, Dijon mustard, garlic, rosemary, thyme, salt, pepper, and red pepper flakes.

    Then, pour it over your pork chops in a shallow dish or a zip-top bag. Let them soak up all that flavor for at least 1 hour or overnight in the fridge for maximum flavor.

    Cooking

    It’s grilling time! Preheat your grill to medium-high heat (about 400°F) with the lid closed for at least 10 minutes.

    Remove the pork chops from the marinade and pat off any excess moisture.

    Grill pork chops for 6-7 minutes on the first side, then flip and grill 4-5 minutes more, or until internal temperature reaches 145°F.

    Insider Tip

    Stick an instant-read thermometer into the thickest part of the chop to ensure your pork chops are done cooking.

    Serving

    Once done, let it rest for 5 minutes before serving. This allows the juices to redistribute and the meat to be more tender.

    Store your grilled pork chops in an airtight container or tightly wrapped in foil in the refrigerator for up to 3 days. To reheat, place them in a preheated oven at 375°F for about 10 minutes or until heated through. You can also throw them on a hot grill for a few minutes on each side.

    Fire up the grill for these Lemon Dijon Pork Chops! Juicy, flavorful, and marinated in a zesty lemon-mustard mix, they’re a guaranteed hit for any cookout.


    Ingredients

    • 4 thick-cut bone-in pork chops (1–2″ thick)
    • 3 tablespoons olive oil
    • Juice and zest of 1 lemon
    • 2 teaspoons Dijon mustard
    • 3 garlic cloves, minced
    • 1 tablespoon fresh rosemary, chopped (or 1 tsp dried)
    • 1 tablespoon fresh thyme, chopped (or 1 tsp dried)
    • 1½ teaspoons kosher salt
    • 1 teaspoon black pepper
    • Optional: pinch of red pepper flakes

    Instructions

    1. Whisk together olive oil, lemon juice and zest, Dijon mustard, garlic, rosemary, thyme, salt, pepper, and red pepper flakes.
