Why I Love This Roasted Asparagus Recipe

Asparagus is one of my favorite vegetables for oven roasting. Much like my recipes for Oven Roasted Garlic Parmesan Broccoli and Roasted Sweet Potato Wedges, this easy asparagus recipe comes out tender and crispy, making for a healthy side dish that pairs perfectly with any protein.

I love adding garlic and parmesan to my roasted vegetables. Anything with cheese and garlic tastes amazing anyway, right? Not only that, but it’s also such a simple way to elevate this nutritious vegetable to the next level.

    Simple Ingredients You’ll Need

    • Asparagus: Try to grab asparagus spears that are similarly sized in diameter for even cooking.
    • Olive oil: A little olive oil is all you need to help the asparagus get nice and crispy in the oven.
    • Garlic: Fresh garlic adds a depth of flavor to this recipe. Use as much or as little as you’d like!
    • Salt & black pepper: A simple seasoning of salt and pepper brings out the natural flavors of the asparagus.
    • Grated parmesan cheese: Adds a subtle nutty and salty flavor to the asparagus. For the best taste, use freshly grated parmesan.
    • Lemon wedges: I love a little lemon juice on roasted asparagus. It adds a nice touch of acidity and brightness.
    • Fresh parsley: Fresh herbs like parsley add color and freshness to the dish.

    Preparation

Start by preheating the oven to 400°F and line a rimmed baking sheet with parchment paper or aluminum foil. Then wash and trim the woody ends of the asparagus.

Toss the asparagus with olive oil, minced garlic, salt, and black pepper until evenly coated.

    Cooking

Next, spread the asparagus in a single layer on the prepared sheet pan and sprinkle with grated parmesan cheese.

Roast for 12-15 minutes, until tender and slightly crispy.

    Pro Tip

Cook time may vary depending on the thickness of your asparagus spears. Thicker asparagus will take longer to cook, while thinner ones will cook faster.

    Serving

Once done, serve the asparagus warm and garnish with fresh parsley and a squeeze of lemon juice if desired. Enjoy!

    Pro Tip

Grate lemon zest over the asparagus for an extra burst of flavor. You can also serve the roasted asparagus with homemade aioli or tzatziki sauce for dipping.

What Pairs Well with Roasted Asparagus?

The real question is, what doesn’t pair well with roasted asparagus? For protein, I recommend my Best Damn George Foreman Grill Chicken Breasts or The Best Damn Sous Vide Steak. And for starch, these Roasted Rosemary and Garlic Potatoes or Creamy Instant Pot Garlic Parmesan Orzo will have you swooning!

    Storage and Reheating

Have leftover roasted asparagus? Store it in an airtight container in the refrigerator for up to 3 days. To reheat, place the asparagus in a baking dish and bake it at 350°F until heated through. You can also microwave it, but be careful not to overcook it, as the asparagus will become mushy.
