Description

This Pumpkin Pear Cobbler is a fall version of the summer classic. An easy dessert with juicy pears and a crisp topping, with all the cozy pumpkin spice flavor you crave.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 ½ cups milk
  • ½ cup melted butter
  • ½ teaspoon salt
  • 1 tablespoon + 1 teaspoon baking powder
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract or paste
  • 1 teaspoon cinnamon
  • 2 ½ pounds pears, canned

Equipment:

  • 9x12-inch baking dish

Instructions

  1. Preheat the oven to 350°F. Grease a 9×12-inch baking dish with Pam or another nonstick spray.
  2. In a large bowl, whisk together the flour, sugar, salt, baking powder, and cinnamon until well combined.
  3. In a separate bowl, mix the milk, melted butter, pumpkin puree, and vanilla until smooth.
  4. Combine the wet and dry mixtures. Stir until the batter is smooth and no clumps remain.
  5. Pour the batter into the prepared baking dish and spread evenly. Place the pears evenly over the top of the batter. Do not press them down.
  6. Bake at 350°F until the cobbler is set and golden on top, about 45 minutes.

Notes

Store any leftover pear pumpkin cobbler in an airtight container in the fridge for 4-5 days. To reheat, place it in the microwave in 30-second intervals until warmed through.
