Description

This Slow Cooker Creamy Garlic Chicken is an easy, delicious dish with tender chicken in a rich garlic sauce – perfect over pasta or rice!


Ingredients

  • 2 lbs diced raw chicken
  • 2 tablespoons oil
  • 1 teaspoon salt and pepper mix
  • 3/5 cup heavy cream (about ½ cup + 2 tablespoons)
  • 1/2 cup chicken stock
  • 1 tablespoon cornstarch
  • 2 tablespoons fresh minced garlic
  • 2 teaspoons fresh chopped parsley
  • 1 teaspoon fresh lemon juice

Instructions

  1. Heat oil in a skillet over medium-high heat. Add the diced chicken and sear until lightly browned on all sides.
  2. Transfer the chicken to the slow cooker.
  3. In a small bowl, whisk together the heavy cream, chicken stock, cornstarch, garlic, parsley, lemon juice, and salt and pepper mix.
  4. Pour the mixture over the chicken and stir to coat evenly.
  5. Cover and cook on LOW for 3 hours, or until the chicken is tender and the sauce is thickened.
  6. Stir before serving.

Notes

You can store this creamy garlic chicken in an airtight container in the refrigerator for up to 3 days. To reheat, simply place the chicken and sauce in a pan over medium heat until warmed through. You can also add a splash of chicken broth or water, as needed, to thin the sauce.
