The Perfect Chicken for Your Pasta Dish
Slow cooker meals are always a hit in my household, and chicken is one of our favorite proteins to use. It’s versatile, budget-friendly, and cooks up like a charm in our trusty crock pot. Before long, the family is always asking for a creamy chicken dish.
My Slow Cooker Creamy Chicken Pasta is definitely one for the books, and it inspired me to create my next slow cooker chicken recipe: this creamy garlic chicken!
I love this one because the sauce ingredients are simple and readily available in your kitchen. I make this one extra special by searing the chicken before adding it to the slow cooker. This gives it a nice crispy exterior and adds depth of flavor. So not 100% dump-and-go, but totally worth it for the taste.

Ingredients
- Chicken: Use chicken thighs or breasts – whichever you prefer for a tender, juicy bite.
- Oil: I like to use olive oil, but you can use whatever cooking oil you’d like to sear the chicken.
- Salt and pepper mix: The classic combo for seasoning perfection, simple but essential.
- Heavy cream: This is what gets you an indulgently creamy sauce.
- Chicken stock: Adds depth and flavor to bring the whole dish together.
- Cornstarch: Helps thicken things up for that perfect consistency.
- Garlic: Fresh garlic cloves add a punch of flavor you can’t skip!
- Fresh parsley: Sprinkle some fresh parsley for a pop of green and freshness.
- Fresh lemon juice: A squeeze of fresh lemon juice brightens everything up.
Add a Little More Flavor
Bring more flavor to your slow cooker creamy garlic chicken with these additions:
- Sun-dried tomatoes for a tangy, rich kick
- Parmesan cheese for the cheese lovers
- Fresh spinach for a pop of color and nutrients
- Crushed red pepper flakes for a hint of spice

Sear the Chicken
First, heat some oil in a skillet over medium-high heat. Add your diced chicken and sear it until it’s lightly browned on all sides.
Once it’s seared, transfer the chicken to your slow cooker.

Prepare Sauce
Grab a small bowl and whisk together the heavy cream, chicken stock, cornstarch, garlic, parsley, lemon juice, and a pinch of salt and pepper.

Once it’s all mixed up, pour it over the chicken and give it a good stir to coat everything evenly.

Slow Cook
Cover and let it cook on LOW for about 3 hours. You’ll know it’s ready when the chicken is tender, and the sauce has thickened up nicely.
Pro tip: Avoid lifting the lid while it’s cooking, as this lets heat escape and can increase cooking time.

Serve & Enjoy
All done! Give it one last stir before serving. Enjoy!
