Slow Cooker Creamy Tuscan Pork Tenderloin

Description

Slow-cook your way to tender, juicy pork tenderloin in a creamy sauce packed with sun-dried tomatoes, garlic, and Italian herbs – searing for extra flavor is optional!


Ingredients

  • 2 pork tenderloins
  • 1 ½ teaspoons salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil (for searing, optional)
  • 3 cloves garlic, minced
  • 1 small yellow onion, finely diced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup sun-dried tomatoes, roughly chopped
  • 2 cups baby spinach
  • ½ cup grated or shredded Parmesan cheese

Instructions

  1. Pat the pork tenderloins dry and season all over with salt, pepper, paprika, and Italian seasoning.
  2. Optional step: Heat olive oil in a skillet over medium-high heat. Sear pork for 2–3 minutes per side until golden brown. (This step adds flavor but can be skipped to shorten prep time)
    • Note: if you are using a multi-functional cooker with a “Saute” function, you can sear the pork directly in the cooker.
  3. Place pork tenderloins in the slow cooker. Add garlic, onion, chicken broth, heavy cream, and sun-dried tomatoes.
  4. Cover and cook on low for 3-4 hours, or on high for 2 hours, until the pork reaches 145°F internally and is tender.
  5. Remove pork and set aside to rest. Stir in spinach and Parmesan cheese.  Let cook on high for 5-10 minutes until slightly thickened.
  6. Slice pork tenderloin and spoon creamy Tuscan sauce over the top.

Notes

Store any leftover Tuscan pork tenderloin in an airtight container in the fridge for up to 3 days. Be sure to store the Tuscan sauce separately in another airtight container.
