    Ingredients

    • Seasoning: You’ll need a simple yet flavorful mix of salt, black pepper, paprika, and Italian seasoning.
    • Olive oil (optional): Great for searing the tenderloins to crispy, golden perfection.
    • Garlic: Adds a punch of savory goodness that elevates the entire dish.
    • Yellow onion: Sweet and aromatic, it builds a flavorful base for the sauce.
    • Chicken broth: The foundation of the rich and savory sauce.
    • Heavy cream: Makes the sauce luxuriously creamy and indulgent.
    • Sun-dried tomatoes: Bursts of tangy sweetness that add depth.
    • Baby spinach: Adds a healthy dose of greens and balances out the richness of the sauce.
    • Parmesan cheese: Grated or shredded, it’s the perfect finishing touch for cheesy, nutty goodness.

How to Slow Cook Tuscan Pork Tenderloin

    Step 1: Season Pork

First, pat the pork tenderloins dry. Then, season them all over with salt, pepper, paprika, and Italian seasoning.

    Step 2: Sear (Optional)

Next, heat olive oil in a skillet over medium-high heat. Sear pork for 2–3 minutes per side until golden brown. (This step adds flavor but can be skipped to shorten prep time!)

Note: If you are using a multi-functional cooker with a “Saute” function, you can just sear the pork directly in the cooker.

    Step 3: Cook

Now place the seared tenderloins in the slow cooker. Add the garlic, onion, chicken broth, heavy cream, and sun-dried tomatoes.

    Pro Tip

To add even more flavor, scrape the brown bits and pan juices from the searing pan into the slow cooker.

Cover and cook on LOW for 3-4 hours or HIGH for 2 hours, until pork reaches an internal temperature of 145°F and is tender.

Step 4: Thicken Sauce & Serve

Once time is up, remove the pork and set it aside to rest. Then stir in spinach and Parmesan cheese. Let that cook on HIGH for 5-10 minutes, or until slightly thickened.

Great Sides for Tuscan Pork Tenderloin

When it comes to pairing sides with this pork tenderloin, I’m thinking about what would best soak up all that delicious Tuscan sauce. My Best Damn Mashed Potatoes instantly comes to mind – what a perfect combo! The sauce also pairs well with green vegetables, like my Garlic Parmesan Roasted Asparagus, Easy Stovetop Sautéed Green Beans, or Air Fryer Brussels Sprouts.

    Storage & Reheating

Store any leftover Tuscan pork tenderloin in an airtight container in the fridge for up to 3 days. Be sure to store the Tuscan sauce separately in another airtight container.

To reheat, place the tenderloin in a pan with a little olive oil and warm it gently. Heat the Tuscan sauce separately in a small pan or microwave, then pour it over the pork once both are warmed through.
