Need an easy dinner? This Turkey and Sweet Potato Chili is great for meal prep! Loaded with sweet potatoes, beans, and turkey, just let your slow cooker handle the rest.
Ingredients
- 2 cups chicken stock
- 1 can white beans, drained and rinsed
- 1 can black beans, drained and rinsed
- 1 can red kidney beans, drained and rinsed
- 1 lb cooked ground turkey
- 3 cups diced sweet potato (about 2 medium potatoes)
- 1 cup diced onion
- 2 bell peppers, diced
- ¼ cup sliced green onions
- 1 (14 oz) can diced tomatoes
- 1 (14 oz) can tomato sauce
- 2 tbsp tomato paste
- 1 tbsp minced fresh garlic
- 1 tbsp cumin
- 2 tbsp chili powder
- ½ tsp oregano
- ½ tsp garlic powder
- 2 tsp salt and pepper mix
- 2 tsp oil
Instructions
- Cook the ground turkey in a skillet until browned. Drain any excess fat and refrigerate until ready to add.
- Add all vegetables, beans, and spices to the slow cooker. Stir well to combine.
- Pour in chicken stock, diced tomatoes, tomato sauce, and tomato paste. Mix until everything is evenly distributed.
- Cover and cook on high for 4 hours or low for 7 hours, until sweet potatoes are tender.
- Stir in the cooked turkey and let it heat through for 10–15 minutes before serving.

Serving suggestion: Top with green onions, shredded cheese, or avocado slices if desired.
