This Watermelon Feta Salad is a refreshing mix of juicy watermelon, salty feta, and fresh mint, tossed in a zesty lemon-honey dressing. Perfect for hot summer days!
Ingredients
- 4 cups watermelon, skin removed and cubed
- ½ small red onion, thinly sliced
- ¾ cup crumbled feta cheese
- 2 tablespoons fresh mint leaves, chopped
- 4 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
- On a cutting board, slice the watermelon into halves. Remove the outer skin along with the white part. Slice them and cut them into equal cubes of watermelon. Set it aside.
- In a small bowl, whisk together the olive oil, lemon juice, honey, a pinch of salt, and black pepper. Set aside.
- In a large serving bowl, combine cubed watermelon, thinly sliced red onion, and crumbled feta.
- Sprinkle chopped mint leaves over the salad. Drizzle with the lemon-honey dressing and gently toss to combine everything.
- Serve cold, garnished with extra mint or feta if desired.
