    This Watermelon Feta Salad has the perfect combination of flavors: juicy watermelon, salty feta cheese, and fresh mint, all tossed in a tasty lemon-honey dressing. It’s refreshing, light, and makes those hot summer days a little more bearable.

    Ultra Refreshing Watermelon Salad Recipe

    I am practically giddy with excitement whenever watermelon season rolls around. And it’s all because of this fresh watermelon, feta, and mint salad. The sweet and salty combination is phenomenal, and the mint just brings it all together. Man, do I love Mediterranean flavors!

    This is a simple salad too, with just a few ingredients and barely any prep. No long list of toppings or a complicated homemade dressing here! With this watermelon feta salad, less really is more.

    Ingredients

    • Watermelon: The cool, sweet watermelon adds a refreshing crunch to the salad.
    • Red onion: Brings that bite for the perfect balance of flavors.
    • Crumbled feta cheese: Crumbly feta adds those salty flavors that taste delicious with the watermelon.
    • Fresh mint: The ultimate herb for a refreshing, summery flavor.
    • Olive oil: I like to use extra-virgin olive oil for an added depth of flavor.
    • Lemon juice: Make sure you use fresh lemon juice!
    • Honey: Mix this with the lemon juice for a lovely balance of sweet and tart flavors.
    • Salt & pepper: This will enhance all of the other flavors in the salad.

    Prepare the Watermelon

    Start by slicing your watermelon in half on a cutting board. Remove the rind and the white part, then chop it up into nice, even cubes. Set it aside for now.

    Mix the Dressing

    Grab a small bowl and whisk together some olive oil, lemon juice, honey, a pinch of salt, and black pepper. That’s it – your dressing is ready to go!

    Put It All Together

    In a large serving bowl, toss in your watermelon cubes, some thinly sliced red onion, and crumbled feta.

    Sprinkle chopped mint leaves over the salad. Drizzle the lemon-honey dressing over and gently toss everything together.

    Serve & Enjoy

    Serve it up cold, and if you’re feeling it, garnish with extra mint or feta. Enjoy!

    What Goes Well with Watermelon Feta Salad?

    Storage

    For the best quality, watermelon feta salad is best served fresh. If storing leftovers, keep them in an airtight container in the fridge and consume within 2 days. Drain any excess liquid and give it a stir before serving.

    My advice? If you expect leftovers, serve the ingredients separately so everyone can build their own salad. That way, you can store everything without it getting soggy.

    Description

    This Watermelon Feta Salad is a refreshing mix of juicy watermelon, salty feta, and fresh mint, tossed in a zesty lemon-honey dressing. Perfect for hot summer days!


    Ingredients

    • 4 cups watermelon, skin removed and cubed
    • ½ small red onion, thinly sliced
    • ¾ cup crumbled feta cheese
    • 2 tablespoons fresh mint leaves, chopped
    • 4 tablespoons olive oil
    • 2 tablespoons fresh lemon juice
    • 1 tablespoon honey
    • ½ teaspoon salt
    • ½ teaspoon pepper

    Instructions

    1. On a cutting board, slice the watermelon into halves. Remove the outer skin along with the white part. Slice them and cut them into equal cubes of watermelon. Set it aside.
    2. In a small bowl, whisk together the olive oil, lemon juice, honey, a pinch of salt, and black pepper. Set aside.
    3. In a large serving bowl, combine cubed watermelon, thinly sliced red onion, and crumbled feta.
    4. Sprinkle chopped mint leaves over the salad. Drizzle with the lemon-honey dressing and gently toss to combine everything.
    5. Serve cold, garnished with extra mint or feta if desired.
