We’ll use a simple seasoning blend of oregano, thyme, parsley, basil, garlic powder, onion powder, kosher or coarse salt and pepper. This blend is very common in Greek cuisine and is a wonderful seasoning mix for pork chops.
Then, with a little bit of olive oil we’ll rub the pork chops with this great seasoning blend and they’re ready for the air fryer.
Preparation
Mix together the ingredients, brush the chops with oil on both sides and apply the seasoning rub. That’s it. Really, that’s all the preparation necessary.
The seasoning will nicely cover 3-4 pork chops. Go ahead and press down on the seasoning to really massage it into the meat.
Cooking
Place the seasoned pork chops in a preheated air fryer at 400°F on the air fry setting. This will be a short cooking time. Pork chop of this size will generally reach the desired temperature in 6-8 minutes. We’ll pull the chops out when the internal temperature reaches 140°F.

Remember, the key is not just reaching 140°F but also allowing the pork chop to rest for a few minutes after cooking. This resting period lets the residual heat distribute evenly throughout the chop, finishing the cooking process, and allowing the juices to redistribute, ensuring a flavorful and juicy result. Always use a reliable meat thermometer to check the internal temperature.
- Juiciness: Cooking pork (or any meat) too long can cause it to dry out. At 140°F, followed by a resting period, the pork chop will continue to rise in temperature slightly (due to carry-over cooking), landing at or just above 145°F. This ensures the meat retains more of its natural juices, giving you a juicier chop.
- Tenderness: Overcooking can also affect the meat’s texture. Cooking pork to 140°F and then letting it rest will help in preserving its tenderness. The muscle fibers will be less contracted than if you were to cook it to a higher temperature, resulting in a more tender bite.
- Flavor: A juicier and more tender pork chop also generally means a more flavorful chop. Overcooking can mute some of the natural flavors, while perfectly cooked pork at the recommended temperature will be more flavorful and enjoyable.
There’s no reason to flip the pork chops. The air fryer provides circulating heat all around the food and with a cooking time this short, the chops have the best chance of getting some color by not flipping them. Don’t worry, they’ll cook through just fine.

When the chops are done, let them rest on a plate for about 5 minutes before serving. This is essential for the chops to reach the desired internal temp of 145°. The carryover cooking will bring them up to temperature without overcooking, which can easily happen with lean, boneless pork chops.
Storage and Reheating
To store cooked pork chops, allow them to cool to room temperature for no longer than two hours. Once cooled, place them in airtight containers or sealable plastic bags, removing as much air as possible. Store in the refrigerator for up to 3-4 days. If you plan to keep them longer, consider freezing the pork chops; they can be stored frozen for up to 2-3 months.
To reheat cooked pork chops in a microwave, place them on a microwave-safe plate, cover with a microwave-safe lid or plastic wrap, and heat for 1-2 minutes or until heated through. Notes
Flipping pork chops of this thickness is not necessary. The air fryer will circulate the heated air around the pork chops and they’ll cook perfectly.
Thicker pork chops will take longer. Pork chops of 1″ – 1.5″ thick can take as long as 10-16 minutes. Monitor internal temperature with an instant-read food thermometer for best results. Remove pork chops when internal temperature reaches 140°F.
