My two favorite dishes from Eastern Europe have to be pierogies and kielbasa, so… why not combine them in a delicious and easy sheet pan meal?
This pierogi and kielbasa sheet pan dinner is perfect for hands-off cooking and makes an easy dinner everyone will love! You’ll get savory, smoky notes from the kielbasa, tender pierogies, and a hint of sweetness from caramelized onion and cabbage.
Serve with classic toppings like sour cream, fresh herbs, or saurkraut for a complete meal!
Ingredients
- Package frozen potato & cheese pierogi: No need to make these yourself! They’ll get wonderfully crispy right on the sheet pan.
- Smoked kielbasa sausage: Sliced and smoky, this kielbasa adds a delicious savory depth.
- Green cabbage: Shredded green cabbage caramelizes beautifully alongside the other ingredients.
- Red onion: Thinly sliced red onions add a touch of sweetness when roasted.
- Dijon mustard: A tangy kick to coat the sheet pan kielbasa and veggies.
- Olive oil: To ensure everything gets perfectly roasted and golden.
- Spice mix: A blend of smoked paprika, garlic powder, dried thyme, salt, and freshly cracked black pepper, to taste, for a robust flavor.

Preparation
First, preheat your oven to 400°F.
In a big bowl, toss together the cabbage and red onion with some Dijon mustard, a tablespoon of olive oil, smoked paprika, garlic powder, thyme, salt, and pepper until everything’s nicely coated.
Spread the cabbage mixture out on a large sheet pan in a single layer. Place the pierogi and kielbasa on top, drizzle with the rest of the olive oil, and give the pierogi a little sprinkle of salt and pepper. Ready to bake!
Cooking
Bake for 20 minutes, then take the pan out of the oven. Flip the pierogi and kielbasa, and give the cabbage a good stir. Roast for another 15–20 minutes, or until pierogi are golden and cabbage is caramelized at the edges.

- 1 (16–18 oz) package frozen potato & cheese pierogi
- 12 oz smoked kielbasa sausage, sliced into ½-inch rounds
- ½ small green cabbage (about 4 cups), cored and sliced into thin wedges or shreds
- 1 medium red onion, thinly sliced
- 1 teaspoon Dijon mustard
- 2 tablespoons olive oil, divided
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon dried thyme
- Salt and freshly cracked black pepper, to taste
- Optional toppings: sour cream, fresh dill or parsley, sauerkraut, mustard, or a squeeze of lemon
Instructions
- Preheat the oven to 400°F.
- In a large bowl, combine the cabbage and red onion with Dijon mustard, 1 tablespoon olive oil, smoked paprika, garlic powder, thyme, salt, and pepper. Toss until evenly coated.
- Transfer the cabbage mixture to a sheet pan. Arrange the pierogi and kielbasa on top. Drizzle with the remaining 1 Tbsp olive oil, then sprinkle the pierogi lightly with salt and pepper.
- Bake for 20 minutes. Remove from the oven, flip the pierogi and kielbasa, and stir the cabbage. Roast another 15–20 minutes, until pierogi are golden and cabbage is caramelized at the edges.
- Transfer to plates and add your desired toppings.
