    Pineapple Coconut Cooler Mocktail

    This Pineapple Coconut Cooler is the ultimate taste of paradise! Pineapple, coconut, lime, and agave bring all the tropical vibes of your classic pina colada, without any white rum. It’s the perfect summer drink for lounging by the pool or enjoying a BBQ with friends.

    Tropical Pineapple Cooler (No Alcohol Needed)

    You really can’t beat the taste of a cold tropical drink on a hot summer day. It just tastes like vacation! This virgin pineapple coconut cooler is pure beach paradise in every sip – no coconut rum required.

    With just a handful of ingredients and five minutes, you can whip up this delightful tropical treat in no time. It’s the perfect drink to serve when friends are over for a relaxing poolside hangout. Or, when you just wanna feel a little fancy for no reason!

    Ingredients

    • Pineapple juice: Fresh pineapple juice is best, but store-bought will still taste great!
    • Coconut milk: Use full-fat for creaminess, or light for a thinner drink.
    • Coconut water: Add a splash for extra hydration and subtle coconut flavor.
    • Lime juice: Freshly squeezed lime juice is key for the perfect balance of tartness.
    • Agave syrup: I prefer this over simple syrup as a healthier option.
    • Ice cubes: Keep everything cold and refreshing.

    Optional Garnishes

    • Pineapple wedge
    • Lime wheel
    • Pineapple leaves
    • Mint sprig

    How to Make a Pineapple Coconut Cooler

    1. In a cocktail shaker or mason jar, combine pineapple juice, coconut milk, coconut water, lime juice, and agave syrup. Shake well until smooth and frothy (about 30 seconds).
    2. Next, fill a tall glass with ice and pour the mixture over the ice.
    3. Add your favorite garnishes, sip, and enjoy!

    Top Tip

    If the coconut milk doesn’t fully incorporate and leaves small bits behind, double-strain the mixture through a fine mesh sieve to ensure a smooth texture.

    Tasty Bites to Enjoy with Your Mocktail

    The tropical flavors of this pineapple coconut cooler would go well with a variety of tasty bites. My vibrant Mango Salsa or Cowboy Caviar is great with some tortilla chips for a delicious snack.     Storage

    Store your pineapple coconut cooler in a large pitcher or airtight container in the fridge for up to 3 days. Be sure to give it a good stir before serving, as the pineapple juice may settle at the bottom.

    • 1.5 oz coconut water
    • 0.5 oz fresh lime juice
    • 0.5 oz agave syrup (adjust to taste)
    • Ice
    • Optional garnishes: pineapple wedge, lime wheel, pineapple leaves, mint sprig
