    Slow Cooker Pork Chops with Mushroom Gravy

    These Slow Cooker Pork Chops are an all-time favorite for a reason. Tender and flavorful, these juicy pork chops are first seared, then simmered in a creamy mushroom gravy right in your slow cooker. I love serving them over mashed potatoes, but they’re also fantastic with rice or noodles!

    Easy Slow Cooker Pork

    From my Instant Pot Pork Chops and Air Fryer Pork Chops to my Grilled Pork Chops and Pan Seared Pork Chops – you name it, I’ve probably cooked it. BUT I’ve never tried to make a slow cooker pork chop recipe… until now.

    The secret to delicious crockpot pork chops is searing them on the stove first. This quick step adds great flavors that make all the difference. It’s a simple step that takes just a few minutes, but it greatly enhances the overall taste of the pork chops.

    And then there’s the mushroom gravy, which is full of rich, savory, and earthy goodness. It’s so good, you’ll want to pour it over everything!

    Ingredients

    • Boneless pork chops: I use thick, boneless pork chops for this recipe.
    • Spice mix: We’ll use a simple salt and pepper mix, paprika, and garlic powder to season the pork.
    • Fresh sage: Delivers some extra flavor to the dish.
    • Olive oil: You’ll need some olive oil for searing the pork chops.
    • Can condensed cream of chicken soup: This is the base of our gravy. You can use cream of mushroom soup instead if that’s what you have.
    • Chicken broth: This helps make the pork chops delightfully tender.
    • White mushrooms: I prefer sliced white mushrooms, but you can use your favorite kind.
    • Onion: A simple yellow onion, chopped, adds a savory flavor to the gravy.

    How to Make Slow Cooker Pork Chops

    Step 1: Sear the Pork Chops

    First, heat some olive oil in a sauté pan over medium-high heat. 

    While that’s warming up, season your pork chops with salt, pepper, paprika, and garlic powder. Then sear each side of the pork chops for about 3 minutes, or until they’re beautifully golden brown.

    Step 2: Prepare the Sauce

    In a mixing bowl, whisk together the cream of chicken soup, chicken broth, and chopped sage until smooth.

    Step 3: Assemble & Deglaze

    Place the mushrooms and onions into the bottom of your slow cooker, then place the seared pork chops right on top.

    Now, pour your sauce mixture into the same sauté pan you used for the pork chops. Grab a spatula and scrape up all those yummy browned bits from the bottom – that’s where the flavor is!

    Step 5: Cook

    Now pour the sauce over the pork chops in the slow cooker. Cover and cook on LOW for 7 hours, or until the pork is tender.

    Step 6: Serve & Enjoy

    Now for the best part! Spoon that delicious mushroom gravy all over your tender pork chops and serve warm. Enjoy!

    Side Ideas for Slow Cooker Pork Chops

    Sides that soak up all that tasty mushroom sauce are a must! My mind goes straight to my Best Damn Mashed Potatoes, Instant Pot Brown Rice, or some classic egg noodles. For greens, I recommend my Easy Stovetop Sautéed Green Beans, Best Damn Oven Roasted Garlic Parmesan Broccoli, or Instant Vortex Plus Asparagus.

    Storage & Reheating

    You’re gonna want to store your slow cooker pork chops in an airtight container in the fridge. They should last for about 3-4 days.

    To reheat, you can microwave the pork chops or warm them on the stovetop with the gravy. For best results, though, I recommend reheating them in the slow cooker on LOW.

    These slow cooker pork chops are seared, then simmered in a creamy mushroom gravy, making for a super tender and flavorful meal perfect over mashed potatoes, rice, or noodles.


    Ingredients

    • 4 boneless pork chops
    • ½ teaspoon salt and pepper mix
    • ½ teaspoon paprika
    • ½ teaspoon garlic powder
    • 1 tablespoon chopped fresh sage
    • 1 tablespoon olive oil
    • 1 (10.5 oz) can condensed cream of chicken soup
    • 1½ cups chicken broth
    • 1 pound white mushrooms, stems removed and sliced
    • 1 small onion, diced

    Instructions

    1. Heat olive oil in a sauté pan over medium-high heat. Season pork chops with salt, pepper, paprika, and garlic powder. Sear each side for about 3 minutes until golden brown.
    2. In a mixing bowl, combine the cream of chicken soup, chicken broth, and chopped sage. Stir until smooth.
    3. Place the mushrooms and onions at the bottom of the slow cooker. Lay the seared pork chops on top.
    4. Pour the sauce mixture into the same sauté pan. Use a spatula to scrape up any browned bits from the bottom of the pan for added flavor.
    5. Pour the sauce over the pork chops in the slow cooker. Cover and cook on LOW for 7 hours, or until the pork is tender.
    6. Spoon the mushroom gravy over the pork chops and serve warm.
