Easy Slow Cooker Pork
From my Instant Pot Pork Chops and Air Fryer Pork Chops to my Grilled Pork Chops and Pan Seared Pork Chops – you name it, I’ve probably cooked it. BUT I’ve never tried to make a slow cooker pork chop recipe… until now.
The secret to delicious crockpot pork chops is searing them on the stove first. This quick step adds great flavors that make all the difference. It’s a simple step that takes just a few minutes, but it greatly enhances the overall taste of the pork chops.
And then there’s the mushroom gravy, which is full of rich, savory, and earthy goodness. It’s so good, you’ll want to pour it over everything!

Ingredients
- Boneless pork chops: I use thick, boneless pork chops for this recipe.
- Spice mix: We’ll use a simple salt and pepper mix, paprika, and garlic powder to season the pork.
- Fresh sage: Delivers some extra flavor to the dish.
- Olive oil: You’ll need some olive oil for searing the pork chops.
- Can condensed cream of chicken soup: This is the base of our gravy. You can use cream of mushroom soup instead if that’s what you have.
- Chicken broth: This helps make the pork chops delightfully tender.
- White mushrooms: I prefer sliced white mushrooms, but you can use your favorite kind.
- Onion: A simple yellow onion, chopped, adds a savory flavor to the gravy.

How to Make Slow Cooker Pork Chops
Step 1: Sear the Pork Chops
First, heat some olive oil in a sauté pan over medium-high heat.
While that’s warming up, season your pork chops with salt, pepper, paprika, and garlic powder. Then sear each side of the pork chops for about 3 minutes, or until they’re beautifully golden brown.


Step 2: Prepare the Sauce
In a mixing bowl, whisk together the cream of chicken soup, chicken broth, and chopped sage until smooth.

Step 3: Assemble & Deglaze
Place the mushrooms and onions into the bottom of your slow cooker, then place the seared pork chops right on top.
Now, pour your sauce mixture into the same sauté pan you used for the pork chops. Grab a spatula and scrape up all those yummy browned bits from the bottom – that’s where the flavor is!


Step 5: Cook
Now pour the sauce over the pork chops in the slow cooker. Cover and cook on LOW for 7 hours, or until the pork is tender.

Step 6: Serve & Enjoy
