Cucumber Mint Cooler – The Ultimate Summer Sip!
If I see cucumber water anywhere, I’m definitely grabbing a glass. It just feels fancy and tastes so much more refreshing than regular water.
If you share the same feelings, then you’re going to be all about this cucumber cooler mocktail.
It brings instant relief on a hot day, making it one of those summer drinks you’ll happily sip on all evening. And since it’s a non-alcoholic drink, no hangover! That’s a win-win in my book.

Ingredients
- Fresh cucumber juice: I like to use English cucumber as it’s sweeter and has fewer seeds. But feel free to use any cucumber you have on hand. We’ll be making this fresh!
- Fresh lemon juice: For a tangy kick, you can also use lime juice if need be.
- Mint simple syrup: We’ll also be making this one fresh. Instructions provided below!
- Plain or lemon-flavored sparkling water: Adds that nice bubbly texture to the mocktail.
- Ice: You can’t have a refreshing, summery mocktail without ice!
Optional Garnishes
- Cucumber slices/ribbons
- Fresh mint sprig
- Lemon wedge
How to Make a Cucumber Cooler
Step 1: Make the Cucumber Juice
You’ll need:
- 1 large cucumber
Directions:
- Wash the cucumber and chop it into small pieces (peeling is totally optional).
- Toss the cucumber pieces into a blender with a splash of water (just 1–2 tablespoons) to get things moving. Blend it up until smooth.
- Strain the mixture through a fine mesh sieve or cheesecloth into a bowl or measuring cup. Press it to get as much juice as you can, then toss the leftover pulp.
Step 2: Make the Mint Simple Syrup
You’ll need:
- Sugar
- Water
- Fresh mint leaves
Directions:
- Combine sugar and water in a small saucepan. Heat it up until it starts to simmer, stirring until the sugar dissolves. Once that’s done, remove it from the heat.
- Add the mint leaves and let them steep for about 15 minutes.
- Strain out the leaves, let the syrup cool, and you’re good to go! Store it in the fridge, and it’ll stay fresh for up to a week.
Step 3: Bring It All Together
- Fill your glass with ice.
- Pour in the cucumber juice, a splash of lemon juice, and the mint simple syrup. Give it a good stir to mix everything up.
- Top it off with sparkling water and gently stir again.
- Finish with your favorite garnishes. I like to add a slice of cucumber, a fresh mint sprig, and a lemon wedge. Enjoy!
What Goes Well with a Cucumber Cooler?

Storage
If you have any leftover cucumber cooler, I recommend storing it in a big pitcher or mason jar in the refrigerator. The only thing is that the sparkling water will lose its fizz over time, so it’s best to consume it within a day or two.
If you plan to store it longer, I’d stop at step 3 and store each component separately. Then, when you’re ready to enjoy, simply mix everything together and add the sparkling water.

- 2 oz fresh cucumber juice
- 1 oz fresh lemon juice
- 1 oz mint simple syrup
- 3 oz plain or lemon-flavored sparkling waterÂ
- Ice
- Optional garnish: cucumber slice/ribbon, fresh mint sprig, or lemon wedge
Instructions
To Make the Cucumber Juice:
- Wash and roughly chop the cucumber (peeling is optional).
- Add cucumber pieces to a blender with a splash of water (1–2 tablespoons) to help it blend.
- Blend until smooth.
- Strain the mixture through a fine mesh sieve or cheesecloth into a bowl or measuring cup, pressing to extract as much liquid as possible. Discard the pulp.
To Make the Mint Simple Syrup:
- Combine sugar and water in a small saucepan and bring to a simmer. Stir until the sugar dissolves, then remove from heat.
- Add mint leaves and let steep for 15 minutes.
- Strain and cool before using. Store in the fridge for up to 1 week.
To Make the Cucumber Cooler:
- Fill a glass with ice.
- Add cucumber juice, lemon juice, and mint simple syrup. Stir to combine.
- Top with sparkling water and gently stir again.
- Add your garnishes of choice and serve!
