    This ground beef stroganoff gives you everything you love about the classic, minus the pricey steak and the fuss. Browned beef, mushrooms, and a creamy sour cream sauce all come together in one skillet in about 40 minutes. It’s the version I reach for on a busy night when I want real comfort food without a big cleanup.

    The Keys to Nailing This Recipe

    Stroganoff is forgiving right up until the sour cream goes in. Get these three things right and you’ll have a smooth, creamy sauce every time.

    • Room-temperature sour cream, stirred in off high heat. Cold sour cream in a hot pan is how you get a grainy, broken sauce. Let it sit out while you cook, then stir it in with the heat on low.
    • Brown the mushrooms until they’re dry. Give them space and don’t crowd the pan. If they steam instead of brown, the sauce ends up watery.
    • Add the broth a little at a time. Pour it in about a half cup at a time, stirring after each, so the flour blends in smoothly and the sauce thickens without lumps.

    How to Make Ground Beef Stroganoff

    Here’s how it comes together, start to finish. The whole thing happens in one skillet once the noodles are boiled.

    1. Cook the Egg Noodles

    Bring a large pot of salted water to a boil and cook the egg noodles according to the package directions until al dente. Drain well, then toss with a teaspoon or two of olive oil or a little butter to keep them from sticking while you make the stroganoff.

    ✦ Quick Tip: Don’t overcook the noodles. Keeping them al dente gives them a little bite and helps them hold up under the warm, creamy sauce.

    2. Brown the Mushrooms

    Melt 1 tablespoon of butter in a large skillet over medium-high heat. Add the sliced mushrooms and cook for 7–10 minutes, stirring occasionally, until they’re nicely browned and the moisture they release has cooked off. Transfer the mushrooms to a plate and set aside.

    ✦ Why cook them separately? Giving the mushrooms some room in the skillet lets them brown instead of steam. This gives them better flavor and keeps all that extra moisture out of the stroganoff sauce.

    3. Cook the Onion, Garlic, and Beef

    Reduce the heat to medium and melt the remaining tablespoon of butter. Add the onion and cook for 4–5 minutes, until softened. Add the garlic and cook for about 30 seconds, just until fragrant.

    Add the ground beef and cook for 6–8 minutes, breaking it into crumbles as it cooks. Once the beef is browned and no longer pink, drain any excess grease if needed.

    ✦ Don’t overcook the beef: Once it’s browned, you’re good to go. It will continue cooking gently in the sauce, so there’s no need to keep it sizzling in the pan.

    4. Build the Sauce

    Sprinkle the flour over the beef and stir well for about 1 minute so the flour cooks into the mixture. Stir in the Worcestershire sauce, Dijon mustard, thyme, salt, and pepper.

    Gradually pour in the beef broth, about ½ cup at a time, stirring well after each addition. Bring everything to a gentle simmer and cook for 5–10 minutes, stirring occasionally, until the sauce has thickened.

    ✦ How thick should it be? The sauce is ready when it easily coats the back of a spoon. Don’t let it get too thick in the skillet—it will thicken a little more once the sour cream is added and as it sits.

    5. Finish with Mushrooms and Sour Cream

    Return the mushrooms to the skillet and stir them into the sauce. Reduce the heat to low, then add the sour cream and stir gently until completely incorporated and the sauce is smooth and creamy.

    Keep the heat low from this point on and don’t let the sauce boil. High heat can cause the sour cream to separate and give the sauce a grainy texture.

    ✦ How much sour cream? Start with ¼ cup for a lighter, less tangy sauce. For a richer, creamier stroganoff, use up to ½ cup. I like starting with less—you can always stir in more until it tastes just right.

    6. Serve

    Spoon the warm ground beef stroganoff over the cooked egg noodles and garnish with chopped fresh parsley, if desired. Serve right away while the sauce is hot and creamy.

    What to Serve With Ground Beef Stroganoff

    Ground beef stroganoff is rich and creamy, so simple vegetables make a great side and help balance out the meal. A fresh salad works well too, and you can never go wrong with some warm bread for soaking up any extra sauce.

    Storage, Freezing, and Make-Ahead

    To store: Let leftovers cool, then refrigerate in an airtight container for up to 3 days. You can store the stroganoff and noodles together or separately.

    To reheat: Reheat gently on the stovetop over low heat or in the microwave. Add a splash of beef broth or milk as needed to loosen the sauce. Avoid boiling, which can cause the sour cream sauce to separate.

    Make ahead: The stroganoff sauce can be made a day ahead and refrigerated. For the best texture, cook the egg noodles fresh when you’re ready to serve.

    Freezing: I don’t recommend freezing the finished stroganoff because sour cream sauces can separate and become grainy after thawing. If you want to freeze it, freeze the sauce before adding the sour cream, then add fresh sour cream when reheating.

    FAQs

    How do I keep the ground beef tender?

    Use 90/10, don’t cook it past browned, and let it finish gently in the sauce rather than simmering hard. The beef stays tender because it’s coated in the creamy sauce, not because of a long cook.

    Why did my sour cream sauce curdle or break?

    The two culprits are cold sour cream and too much heat. Bring it to room temp, drop the pan to low before it goes in, and don’t let it boil after. If it does break slightly, pulling it off the heat and whisking can help.

    Can I leave out the mushrooms?

    Yes, the recipe still works without them. Cook the onion a little longer to develop more flavor, or add an extra splash of Worcestershire sauce so the sauce doesn’t feel flat.

    Can I use a different pasta instead of egg noodles?

    Egg noodles are traditional and hold the sauce well, but wide pasta like pappardelle, or even rotini or penne, works fine. Just keep in mind that different pasta shapes will hold the sauce a little differently.

    • 1 pound lean ground beef 90/10 or leaner
    • 12 ounces egg noodles
    • 2 tablespoons unsalted butter divided
    • 8 ounces cremini mushrooms sliced
