    Charred Grapefruit Fizz Mocktail

    This Charred Grapefruit Fizz is the ultimate bubbly cocktail, bursting with smoky, bitter-sweet flavor – all without a drop of alcohol. Grilled grapefruits bring a rich, caramelized depth to every sip, creating a refreshing drink that is totally next-level.

    Smoky Cocktail Magic, Without the Buzz

    Ever have a grilled cocktail? There’s something extra special about ordering a drink at the bar and watching the mixologist fire up the fruit. But you don’t need a fancy setup, or even the alcohol, to enjoy that charred, smoky flavor at home.

    We’ve taken an old classic cocktail and given it a zero-proof twist by cooking grapefruits right on the grill (a skillet pan works too!). And I’ll say, the results are pretty tasty! 

    This virgin charred grapefruit fizz is a show-stopping sipper that proves you don’t need the buzz to enjoy delicious cocktails. Perfect for cocktail lovers who want all the fun without the alcohol, this fizzy drink is super easy to make with just a few simple ingredients.

    Ingredients

    • Grapefruit: Fresh grapefruits are what make this mocktail extra special. You can use store-bought, but I recommend fresh for the best taste.
    • Granulated sugar (optional): In case you want a little added sweetness to balance out the bitterness.
    • Rosemary simple syrup: I’ll show you how to make this below! You can also just sub with plain simple syrup.
    • Fresh lemon juice: Adds a touch of acidity to balance everything out.
    • Sparkling water: Use grapefruit, lemon, or plain sparkling water. Soda water or club soda also works!
    • Ice: Crushed ice (or even regular cubes) will make your cocktail extra refreshing.

    Optional Garnishes

    • Sprig of rosemary
    • Grapefruit wedge

    How to Make Rosemary Simple Syrup

    Ingredients:

    • ½ cup sugar
    • ½ cup water
    • 2–3 sprigs fresh rosemary

    Instructions:

    1. In a small saucepan, combine sugar, water, and rosemary.
    2. Bring to a simmer over medium heat, stirring until the sugar dissolves.
    3. Remove from heat and let the rosemary steep for 15-20 minutes. Strain and cool completely before using.

    How to Make a Charred Grapefruit Fizz Mocktail

    1. Start by charring the grapefruit. Sprinkle a little sugar on the cut sides (optional, but it helps with caramelization). Place the grapefruit cut-side down on a hot skillet or grill pan. Let it sizzle until it’s caramelized and slightly charred, about 3–4 minutes.
    2. Let the grapefruit cool for a few minutes (3–5 should do it), then squeeze out all that smoky, delicious juice.
    3. In a cocktail shaker or mixing glass, combine 2 oz charred grapefruit juice, rosemary simple syrup, and lemon juice. Toss in some ice and give it a good shake to create that nice frothy head, or stir if you prefer.
    4. Strain the mixture into a cocktail glass filled with ice. Top with sparkling water and garnish with a rosemary sprig and/or grapefruit slices. Cheers!

    What to Pair with Your Charred Grapefruit Fizz

    The bright, tangy flavors of the charred grapefruit fizz pair beautifully with grilled dishes like my Grilled Chicken Tenders, Lemon Dijon Grilled Pork Chops, and Grilled Salmon with Lemon Butter Sauce.     Storage

    This mocktail is only one serving, but you can make a larger batch and store it in the fridge for up to 3 days. Just make sure to give it a good stir before serving, as the ingredients may settle. I don’t recommend keeping it for longer as the sparkling water will lose its fizz and the flavors may start to change.

    Ingredients

    For the Charred Grapefruit Fizz:

    • 1 large grapefruit, halved
    • ½ teaspoon granulated sugar (optional)
    • 1 oz rosemary simple syrup (see recipe below), can sub with plain simple syrup
    • ½ oz fresh lemon juice
    • Sparkling water (grapefruit, lemon, or plain)
    • Ice
    • Garnishes (optional): rosemary sprig, grapefruit wedge

    For the Rosemary Simple Syrup:

    • ½ cup sugar
    • ½ cup water
    • 2–3 sprigs fresh rosemary

    1. Char the grapefruit.  Sprinkle the cut sides of the grapefruit lightly with sugar (optional step; this helps with caramelization). Place cut-side down on a hot skillet or grill pan until caramelized and slightly charred, about 3–4 minutes.
    2. Let the grapefruit cool slightly (3-5 minutes), then squeeze out the juice.
    3. In a shaker or mixing glass, combine 2 oz charred grapefruit juice, rosemary simple syrup, and lemon juice.  Add ice and shake or stir to chill.
