We’ve taken an old classic cocktail and given it a zero-proof twist by cooking grapefruits right on the grill (a skillet pan works too!). And I’ll say, the results are pretty tasty!
This virgin charred grapefruit fizz is a show-stopping sipper that proves you don’t need the buzz to enjoy delicious cocktails. Perfect for cocktail lovers who want all the fun without the alcohol, this fizzy drink is super easy to make with just a few simple ingredients.

Ingredients
- Grapefruit: Fresh grapefruits are what make this mocktail extra special. You can use store-bought, but I recommend fresh for the best taste.
- Granulated sugar (optional): In case you want a little added sweetness to balance out the bitterness.
- Rosemary simple syrup: I’ll show you how to make this below! You can also just sub with plain simple syrup.
- Fresh lemon juice: Adds a touch of acidity to balance everything out.
- Sparkling water: Use grapefruit, lemon, or plain sparkling water. Soda water or club soda also works!
- Ice: Crushed ice (or even regular cubes) will make your cocktail extra refreshing.

- Sprig of rosemary
- Grapefruit wedge
How to Make Rosemary Simple Syrup
Ingredients:
- ½ cup sugar
- ½ cup water
- 2–3 sprigs fresh rosemary
Instructions:
- In a small saucepan, combine sugar, water, and rosemary.
- Bring to a simmer over medium heat, stirring until the sugar dissolves.
- Remove from heat and let the rosemary steep for 15-20 minutes. Strain and cool completely before using.
How to Make a Charred Grapefruit Fizz Mocktail
- Start by charring the grapefruit. Sprinkle a little sugar on the cut sides (optional, but it helps with caramelization). Place the grapefruit cut-side down on a hot skillet or grill pan. Let it sizzle until it’s caramelized and slightly charred, about 3–4 minutes.
- Let the grapefruit cool for a few minutes (3–5 should do it), then squeeze out all that smoky, delicious juice.
- In a cocktail shaker or mixing glass, combine 2 oz charred grapefruit juice, rosemary simple syrup, and lemon juice. Toss in some ice and give it a good shake to create that nice frothy head, or stir if you prefer.
- Strain the mixture into a cocktail glass filled with ice. Top with sparkling water and garnish with a rosemary sprig and/or grapefruit slices. Cheers!

- ½ cup water
