A few things make the difference between good and great here. Get these right and you’re set.
- Don’t skip the lemon zest. It carries the bright, floral flavor that the juice alone can’t.
- Marinate at least 30 minutes. Two to four hours gives the best flavor.
- Chicken thighs are at their best when cooked beyond the minimum safe temperature. While chicken is safe at 165°F, thighs become noticeably more tender and juicy when cooked to about 185-195°F.
How to Make Air Fryer Greek Chicken
Here’s how it comes together. The marinade is the whole game, so start there.
Step 1: Make the Greek Marinade
In a bowl, whisk together the olive oil, white wine vinegar, lemon juice, lemon zest, oregano, minced garlic, seasoned salt, and black pepper until it’s well combined.
The zest is worth a little care: Using a zester or fine grater, rub just the outer yellow layer of the lemon, about a tablespoon from one lemon. Stop at the yellow. The white pith underneath is bitter and you don’t want it in there.
For the pepper, fresh coarse ground makes a real difference against the lemon and garlic. If you’re a garlic lover, feel free to add another clove.
✦ What makes it Greek? Lemon, oregano, and garlic are the backbone of the flavor. No Greek seasoning blend on hand? A good store-bought Greek seasoning works in a pinch, but the fresh lemon and zest are what really set this apart.
Seasoned Salt?
You probably have some in your cabinet, but if not, it’s readily available everywhere. Lawry’s is the popular brand. It’s a big step saver, cuts down on many ingredients, and is bursting with flavor!
Step 2: Marinate the chicken
Add the chicken thighs to a large zip-top bag, pour in the marinade, and work it around so every piece is coated.
Seal it up and refrigerate for 30 minutes to 4 hours.
✦ Marinating Tip: Marinate for at least 30 minutes, but 2 to 4 hours gives the best flavor. Because this marinade contains lemon juice and vinegar, try not to marinate longer than about 8 hours or the chicken can begin to lose its firm texture.

Traditional marinating of meat such as chicken, doesn’t actually penetrate the meat very deep at all. In fact, most of the flavor stays on the skin or surface, but the salt can penetrate deeper, giving extra flavor throughout.
Step 3: Preheat and air fry
Preheat the air fryer at 375°F for 5 minutes. Set it to the air fry setting, place the thighs skin side down, and cook at 375°F for 24 to 28 minutes or until internal temperature of 185°F.
✦ Flip at the halfway mark. It cooks evenly and crisps the skin. Add a few lemon slices at the flip if you want extra brightness.
✦ Pull at 185°F. An instant-read thermometer takes out the guesswork. If you don’t own one, it’s a low-cost tool that pays off every time you cook meat.
Cook to temp of 185°F?
Absolutely. Although 165°F is the minimum safe internal temperature for chicken, thighs have more connective tissue than breasts. Cooking them to about 185-195°F makes them noticeably more tender without drying them out.
No Air Fryer? Bake Them Instead
No air fryer, or making a big batch? Bake the marinated thighs on a lined sheet pan at 425°F for 35 to 45 minutes, until the skin is golden and the internal temp hits 185°F.
Several readers bake theirs in bulk when the air fryer is too small and say the flavor holds up just as well.

This chicken is easy to build a meal around. Keep it Mediterranean with a grain, a roasted vegetable, and something fresh alongside. A bowl of tzatziki and a simple cucumber-feta salad round it out nicely if you’ve got them.

Storing and Reheating
Leftovers: Store cooked chicken in an airtight container in the fridge for up to 4 days.
Reheating: Pop it back in the air fryer at 350°F for 3 to 4 minutes to bring the skin back. The microwave works too, but you’ll lose the crisp.
Freezing: Freeze cooked thighs for up to 3 months. Thaw overnight in the fridge before reheating.

Can I use boneless or skinless thighs, or chicken breasts?
Yes. Boneless thighs cook faster, so start checking around 12 to 14 minutes. Breasts work too, but watch them closely and pull at 165°F, since they dry out faster than thighs.
Can I make this in the oven instead?
Absolutely. Bake at 425°F for 35 to 45 minutes, or until the thickest part reaches 185-195°F.
How do I keep the chicken from drying out?
Use a thermometer and pull the chicken at 185°F. Bone-in skin-on thighs are naturally forgiving since the skin protects the meat, so just avoid pushing them well past done.
What can I use instead of white wine vinegar?
Red wine vinegar or an extra splash of lemon juice both work. Red wine vinegar actually leans a little more traditional for Greek flavors.

- 4 chicken thighs, bone-in skin-on

Instructions

Your recipes are fantastic. Would it be better to substitute plain white vinegar or red wine vinegar for the white wine vinegar if we don’t have it? Ever tried a little plain yogurt either on the side or mixed in with the seasonings? On one of the recipe pages I saw for the basket type air fryers where they “bookshelfed” multiple leg quarters with thickest side down, leg pointing up side by side…lets you fit more in the air fryer and they seem to cook quicker this way.
Assuming this shows them like I intend they were like this: I’I’I’I’ 4 leg quarters side by side in my 8 quart air fryer. ‘ = leg pointing upward. For faster cooking try inserting something to leave some airflow between the legs. Toothpicks work well.

What a fantastic recipe! I followed the recipe to a T – adjusted proportionally to only make 1 thigh since I live alone and don’t eat meat most days – and I know I will be making this very often. The meat was so flavorful and juicy, and the skin was perfectly crisp. I left it in the marinade for a little over 4 hours, but I look forward to leaving it in overnight next time to see if I can coax out even more flavor. Incredibly easy in the air fryer as well. YUMMY and FLAVORFUL! Used Chicken thighs from the Farmer. We have a farmer’s market. I also grew some Greek oregano and some parsley, so used those, also.
Forgive me Recipe Teacher, but I cheated. I used lemon and a touch of lime juice, when I ran out. After all, the Mexicans in Mexico call lemon and lime limon, so I went with it! Happened to have dried California Lemon Peel in my spice cabinet, and cheated with that as well.
My chicken thighs were so big that I could only fit 3 in the Air Fryer, so I froze the other two in the marinade.
It was great the first night, and SUPER FANTASTIC the second time I cooked them, about 2 weeks later.
Totally moist, flavorful, and not the same old, same old.
