Some nights, you just want dinner to handle itself. That’s exactly what these slow cooker and Instant Pot recipes do. A few minutes of work, you walk away, and the appliance carries the load until dinner is ready.
A quick note on what “hands-off” really means here. A few of these recipes need 5 minutes of work upfront. A quick sear, a sprinkle of seasoning, maybe browning some meat before you walk away. That small bit of effort is what gives you depth of flavor instead of boiled meat. Once the lid goes on, you really can forget about it.
Slow Cooker Dinners
Slow cooker recipes are the original hands-off dinners. Start them in the morning, walk away for the day, come home to a tender, ready-to-eat meal. These are the eight we’d put on rotation first.
Slow Cooker Country Style Ribs
The most popular slow cooker recipe on the site. Boneless ribs cook low & slow until fall-apart tender, then tossed in BBQ sauce. 5-minute prep, no tending.
Slow Cooker Pulled Pork
Pork shoulder with a dry rub, 8 hours on low, shred and serve. The classic preparation, and it still holds up. Great for sandwiches, tacos, or piled over rice.
Slow Cooker Pulled Chicken
Boneless chicken, seasonings, a splash of liquid. The slow cooker does the rest. Shreds beautifully for tacos, sandwiches, buffalo chicken dip, or meal prep lunches.
Slow Cooker Balsamic Pork Roast
A Sunday dinner that runs itself all day. Pork loin or shoulder with a balsamic glaze, eight hours on low, and the glaze reduces into something genuinely good.
Slow Cooker Baby Back Ribs
Ribs without the 3-hour oven commitment. Dry rub, slow cooker, hands off. A quick broil at the end gets you the caramelized BBQ finish.
Slow Cooker Bourbon Meatballs
Equal parts party app and dinner. Frozen meatballs in a bourbon BBQ sauce, set on low, stir occasionally. Serve over rice for dinner or with toothpicks as an app.
Slow Cooker Chicken and Rice
Built for meal prep but it works for a Tuesday night just as well. Chicken, rice, and seasonings all in one pot. Set it, walk away, portion it out.
Slow Cooker Butter Chicken
The most literal dump-and-walk-away recipe on the list. Everything goes in at once, no browning, no sautéing. Six hours later you’ve got rich, creamy butter chicken.
Instant Pot Dinners
When dinner needs to be ready in an hour, not eight, this is the group. The Instant Pot gets you the same fall-apart tender results as long, slow braising, just on a pressure-cooker timeline. Twelve recipes that handle pork, beef, chicken, and a full chili.
Instant Pot Pulled Pork
The most popular IP recipe on the site. Pork shoulder, dry rub, a quick sear, then about an hour in the IP gets you pulled pork as good as the 12-hour version.
Instant Pot Pork Tenderloin
One of the fastest hands-off dinners possible. Three minutes of pressure cooking gives you tender, juicy pork tenderloin. About 15 minutes from start to plate.
Instant Pot Boneless Pork Chops
Boneless pork chops that come out actually tender, which is harder than it sounds. Under 20 minutes total. Great with mashed potatoes, rice, or buttered noodles.

Instant Pot Pulled Chicken
Shredded chicken in about 45 minutes. The base recipe is neutral on purpose; season it for BBQ, buffalo, tacos, or whatever the night calls for.
Instant Pot Meatloaf
Meatloaf in the Instant Pot is a game most people haven’t played. Tender, holds together, and finishes way faster than the oven version. Top with the ketchup-brown sugar glaze.
Instant Pot Country Style Ribs
The pressure cooker version of my top slow cooker recipe. Same fall-apart finish, ready in under an hour. Choose this when you forgot to start the slow cooker.

Instant Pot Pot Roast
Classic Sunday dinner at pressure-cooker speed. Chuck roast, potatoes, carrots, gravy. 90 minutes versus 4-5 hours in the oven, and it comes out just as tender.
Instant Pot Beef Chuck Chili
Real chili with chunks of chuck roast, not ground beef. The Instant Pot tenderizes the beef and develops the chili flavor in about an hour. Worth the small upgrade.
Prefer a Slow Cooker Version?
My Slow Cooker Chili takes a more traditional approach with ground beef.
Instant Pot Beef Stew
Cold-weather classic in a fraction of the time. Tender beef, potatoes, carrots, rich gravy. Sear the beef for five minutes, pressure cook for 35, dinner is done.
Instant Pot Beef Stroganoff
Everything in one pot. Beef, mushrooms, and noodles go in together, then get tossed with sour cream at the end. Comfort food without a pile of dishes.
Shredded Beef Sandwiches
Italian-style shredded beef on a roll with provolone and pepperoncini. The Instant Pot takes chuck roast to fall-apart tender in about an hour. Pile it high.
Instant Pot Lemon Chicken and Rice
One pot, brighter flavor than the rest of the list. Chicken, rice, and a creamy lemon sauce cook together in about 30 minutes.
Most of these reheat beautifully, freeze well, and stretch into multiple meals. The pulled pork, shredded beef, and pulled chicken recipes especially earn their keep on meal prep day. Make a big batch on Sunday, eat it three different ways through the week.
